Grilled Feta Asparagus Salad

My Grilled Feta Asparagus Salad is packed with freshly grilled asparagus, sweet onion, peppers, tomatoes, and feta. Ready in under 30 minutes!

I am really excited to partner, again, with Michigan Asparagus! Asparagus is versatile and packed with nutrients, and it happens to be one of my favorite vegetables!

My Grilled Feta Asparagus Salad is what summer salad dreams are made of. Packed with grilled asparagus, grilled red onions, roasted red peppers, tomatoes, and feta cheese. Topped with a simple squeeze of lemon makes a fresh and simple salad.

I love salads in the summer and this one is so easy! I also don't make an elaborate dressing for the salad because the grilled veggies have a little olive oil, salt, and pepper. A fresh squeeze of lemon is the perfect topping for a lightly dressed salad.

However, if you like more dressing on your Grilled Feta Asparagus Salad, a simple vinaigrette will be delicious.

Ingredients

  • fresh asparagus
  • red onion - I like a use a sweet onion for this salad. If you do not have a red onion, use a Vidalia onion.
  • olive oil
  • salt
  • black pepper
  • roasted red pepper -You can find these in jars by the pickles and olives in the grocery store. They are typically whole, and will be chopped for the Grilled Feta Asparagus Salad.
  • cherry tomatoes - any size tomato works, but it needs to be chopped in bite sized pieces.
  • feta cheese - If you buy a block you can crumble the feta by hand.
  • lemon - fresh is best for this recipe!

Instructions

  1. Trim the ends of the asparagus. Set aside. Peel onion and cut into ½ inch circles, keep the layers together.
  2. Heat a grill to high heat. Coat asparagus and onions olive oil and season with salt and pepper.
  3. Place asparagus and onions on the grill. Turn occasionally for 3-5 minutes. Asparagus and onion will be tender and slightly charred.
  4. Remove asparagus and onion from the grill. Allow to cool a few minutes and chop into large pieces.
  5. On a bed of salad green, top with asparagus, onion, chopped roasted red pepper, halved tomatoes, and crumbled feta.
  6. Squeeze the juice from 1 lemon over the salad (about 1 ½ tablespoon of fresh juice). Toss salad to mix ingredients, and serve.

Asparagus is not only delicious, but it is full of nutritious. Asparagus is one of the most nutritionally well-balanced vegetables. It leads nearly all produce items in the wide array of nutrients it supplies in significant amounts for a healthy diet.

Asparagus is also low in calories, at less than 4 calories per spear, and it contains no fat or cholesterol while being very low in sodium.

I love that this versatile vegetable checks so many boxes and I feel like I can always try something new when I cook it, or revisit an old favorite. In this case, my Grilled Feta Asparagus Salad is a perfect way to use one of my favorite veggies.

How To Pick The Best Asparagus!

I thought for a long time that the thinner spears are the best to pick. However, after working with Michigan Asparagus last year and this year, I learned that the thicker asparagus doesn’t mean tough asparagus AND oftentimes it is even more flavorful!

Michigan Asparagus advises to look for firm, fresh, spears with closed, compact tips and uniform diameter. This allows all spears will cook in the same amount of time.

The best asparagus comes from farmers, and it is now more important than ever to support local farmers and their families.

  • 1 lb fresh asparagus
