Bacon Cornbread Casserole is a twist on a traditional corn casserole. It is elevated with extra mix-ins and toppings. Simple to put together, delicious to eat, and makes great leftovers.
This casserole is filled with whole kernel corn, creamed corn, corn muffin mix, sour cream, melted butter, bacon, onion, and cheese. The result is a rich, buttery, savory, sweet, delicious side with a firm pudding like texture and studded with whole corn kernels and chopped bacon.
I serve this casserole warm, but it delicious at room temperature as well. It is the perfect side dish when your holiday table needs "just one more side".

Ingredients
- Jiffy Corn Muffin Mix
- Whole Kernel Corn
- Creamed Corn
- Sour Cream
- Melted Butter
- Bacon
- Green Onion
- Cheddar Cheese
- 8x8 Baking Dish
- Mixing Bowl
Instructions
Oven Instructions:
- Preheat the oven to 350°F.
- Set aside ⅓ of the bacon, onion, and cheese for topping.
- In a medium bowl bowl, mix all of the remaining ingredients together. Pour batter into a greased 8"x8" baking pan.
- Cook uncovered for 45-50 minutes or until lightly browned.
Slow Cooker Instructions:
- Lightly grease a 6 quart slow cooker.
- Set aside ⅓ of the bacon, onion, and cheese for topping.
- Mix all ingredients in a medium mixing bowl. Pour into slow cooker.
- Cook on high 2-3 hours or low for 4 hours. The middle should be set.
