My Fig Crumble Bars are a favorite treat feature nostalgic flavors from a butter crust and crumble to a smooth fig and citrus filling. Simple to make and even better to eat!
My Fig Crumble Bars are one of my favorite treats. I grew up eating the famous fig snack cakes and these are a my take on one of my childhood favorites.
I improve the treat a bit with a buttery crust and a delicious crumble topping. The fig filling is homemade with fresh figs and zesty citrus from fresh oranges.
Sometimes making your own crust and crumble can feel a little intimidating, but I promise you that this crust is wonderfully simple. The other great thing about this crust and crumble recipe is it can be used for a variety of fruits like raspberries, blueberries, or blackberries.
In this case I am using fresh figs. Don't be nervous if you have not tried them before because they are sweet and make excellent fillings for baked goods. I really enjoy the flavor of figs with a citrus like lemon or orange as well.
For this recipe, my figs and citrus comes from Melissa's Produce. I was gifted a gorgeous box of fresh fruit and am thrilled to show it off this week for Spring Sweets Week!
Ingredients
For Fig Filling
- fresh figs
- fresh orange zest
- fresh orange juice
- sugar
For Crust and Crumble:
- all-purpose flour
- granulated sugar
- baking powder
- cold salted butter
- large egg
- vanilla extract
Instructions
For Fig Filling:
- Add figs, orange zest, orange juice, and sugar to a medium saucepan.
- Bring fig mixture to a simmer over low heat. Stir frequently to prevent scorching.
- Allow the filling to cook on low for 20 minutes. During this time use a spoon to break apart the figs. The filling with have some pieces, but they should be small. The filling will have a thick coating on the back of a metal spoon.
- Remove filling from heat and allow it to cool to room temperature.
For the Crust and Crumble:
- Preheat oven to 375°F. Line an 8x8 baking dish with parchment paper. This will allow you to easily remove the bars from the pan.
- Whisk together flour, sugar, and baking powder in a medium mixing bowl. Add the egg, vanilla, and butter.
- Use a pastry cutter or fork to work the butter, egg, and vanilla into the dry ingredients. The mixture should be well blended with pea to sand size pieces.
- Firmly, press half the mixture into the pan to create the crust. Spread the cooled fig filling over the crust. Top evenly with the remaining crumble.
- Bake, uncovered, for 30-35 minutes. The top should be golden brown and fig filling bubbly.
