My Crispy Sheet Pan Salmon and Asparagus is a simple sheet pan meal that can be made in less than 30 minutes.
This post is sponsored by Michigan Asparagus. However, as always, all opinions are my own.
I am really excited to partner with Michigan Asparagus this year. Asparagus is one of my favorite vegetables. It is versatile and packed with nutrients.
My Crispy Sheet Pan Salmon and Asparagus is one of my favorite recipes. It is simple to make and so delicious.
I start with salmon fillets and top them with a panko, parmesan, dijon, olive oil, and green onion. Baked with fresh asparagus that is drizzled in olive oil. The salmon topping is really crispy and full of flavor. The asparagus is cooked to perfection and perfectly seasoned.
This meal can be made on a weeknight (under 30 minutes!), or it can be used for entertaining friends for dinner- it is so versatile!
Ingredients
- Salmon Fillets - I like to use 5-6 oz. individual pieces
- Asparagus
- Panko Bread Crumbs - panko creates a super crispy topping. Regular bread crumbs will work, but panko is the best for crispy!
- Salt
- Black Pepper
- Olive Oil
- Parmesan Cheese - grated or shredded work well for this recipe.
- Dijon Mustard - stone ground mustard is fantastic as well.
- Green Onion
- Dried Parsley - fresh parsley works well too.
- Lemon Zest
Instructions
- Cut salmon into equal portions.
- Pre-heat the oven to 425°F. Line a rimmed baking sheet with foil. Place salmon on the baking sheet. Season with salt and pepper.
- In a medium bowl, mix bread crumbs, olive oil, Parmesan, dijon, green onion, parsley, lemon zest, salt, and pepper.
- Equally, divide the topping between the salmon filets. Press the topping firmly into the salmon.
- Evenly arrange the asparagus around the salmon. Drizzle with olive oil and season with salt and pepper.
- Place in oven and bake the Crispy Sheet Pan Salmon and Asparagus for 12-14 minutes. Serve immediately.
What Makes Asparagus Amazing!?
Asparagus is not only delicious, but it is full of nutritious. Asparagus is one of the most nutritionally well-balanced vegetables. It leads nearly all produce items in the wide array of nutrients it supplies in significant amounts for a healthy diet.
Asparagus is also low in calories, at less than 4 calories per spear, and it contains no fat or cholesterol while being very low in sodium.
I love that this versatile vegetable checks so many boxes and I feel like I can always try something new when I cook it, or revisit an old favorite. In this case, my Crispy Sheet Pan Salmon and Asparagus is a perfect way to use one of my favorite veggies.
How to Pick the Best Asparagus?
I thought for a long time that the thinner spears are the best to pick. However, after working with Michigan Asparagus last year, I learned that the thicker asparagus doesn’t mean tough asparagus AND oftentimes it is even more flavorful!
Michigan Asparagus advises to look for firm, fresh, spears with closed, compact tips and uniform diameter. This allows all spears will cook in the same amount of time.
The best asparagus comes from farmers, and it is now more important than ever to support local farmers and their families. Shopping local also reduces the carbon footprint of the product!
