Dragon Fruit and Citrus Overnight Oats

Dragon Fruit and Citrus Overnight Oats are an easy prep breakfast. Red dragon fruit gives the oats a beautiful color. A pop of citrus from fresh zest and sweetness from honey completes a great start to the day.

I love oatmeal in all forms, and overnight oats are one of my favorite things to make when I need a quick breakfast the next morning. Overnight oats are really easy to make the the mix-in options are endless.

I love a little fruit in my oatmeal and typically will throw in something common like strawberries, blueberries, or blackberries. However, my Dragon Fruit and Citrus Overnight Oats are a delicious twist on a simple breakfast.

Dragon fruit is a great add because it creates a beautiful color and light sweet flavor. I find that dragon fruit is not super sweet which makes it ideal for breakfast lovers who don't like too much sweetness in their morning meal.

For this recipe, my dragon fruit and citrus comes from Melissa's Produce. I was gifted a gorgeous box of fresh fruit and look forward to showing it off this week for Spring Sweets Week!

Ingredients

  • old fashion rolled oats - it is important to use rolled oats versus instant or steel cut because they soak up the most liquid.
  • coconut milk- regular milk, almond, soy, or another milk will work great.
  • plain or vanilla yogurt- vanilla yogurt will add an additional layer of sweetness and flavor, but vanilla works great too.
  • honey- maple syrup or agave can be substituted for honey
  • meyer lemon zest- regular lemon zest can be used in place of meyer lemon zest
  • orange zest - tangerine or clementine can be used in place of orange zest
  • dragon fruit- for the pink color, use a red dragon fruit. White varieties work great, but will not produce a pink hue.

Instructions

  1. Add oats, coconut milk, yogurt, honey, zests, and ½ cup dragon fruit into a jar or storage container with a lid. Stir ingredients together. Place in the fridge overnight.
  2. When ready to eat, stir the oats. Additional coconut milk can be added if the mixture becomes too thick. Top with remaining dragon fruit and serve.

Dragon Fruit and Citrus Overnight Oats

Ingredients
 
 

  • 1 cup old fashion rolled oats
  • ¾ cup coconut milk
  • ¼ cup plain or vanilla yogurt
  • 1 ½ tablespoon honey
  • ½ tsp meyer lemon zest
  • ½ teaspoon orange zest
  • 1 cup diced dragon fruit, divided

Instructions
 

  • Add oats, coconut milk, yogurt, honey, zests, and ½ cup dragon fruit into a jar or storage container with a lid. Stir ingredients together. Place in the fridge overnight.
  • When ready to eat, stir the oats. Additional coconut milk can be added if the mixture becomes too thick. Top with remaining dragon fruit and serve.

Notes

Oats will be good in the fridge for 3-4 days. 
Red dragon fruit stains easily. Make sure you use a cutting board and keep away from fabric.
