Cheesy Taco Barley Skillet

One-pot Cheesy Taco Barley Skillet is packed with beef, barley, and taco flavors. Topped with cheese and your favorite toppings. A delicious and easy weeknight meal.

Cheesy Taco Barley Skillet is one of my favorites for a weeknight: one-pot. We love tacos in our house and was excited to use our favorite flavors to create a tasty one-pot.

What makes this recipe unique is the lean ground beef and and barley over pasta or rice. We opted to top ours with green onion, sliced olives, and chopped tomatoes.

Ingredients

  • lean ground beef
  • onion 
  • taco seasoning packet
  • black beans 
  • diced green chilies
  • medium salsa
  • beef broth
  • uncooked medium barley
  • salt
  • shredded cheddar cheese
  • sliced black olives
  • chopped tomatoes
  • sliced green onion

Instructions

  1. Brown beef and onion until the beef is no longer pink and onion tender.
  2. Add the taco seasoning and stir to coat. Add beans, chilies, salsa, broth, and barley.
  3. Simmer 30-40 min or until barley is tender; stirring every so often to prevent burning.
  4. Keep a little extra broth or water on hand in case you need to add extra. Season with salt if desired.
  5. Top with cheese and allow it to melt. Top Cheesy Taco Barley Skillet with desired taco toppings (example: sour cream, olives, and tomatoes).

  • 1 ½ cup shredded cheddar cheese
  • sliced black olives
  • chopped tomatoes
  • sliced green onion
