Mexican Street Corn Elote Bowls are a filled with grilled corn, lime, spice, creamy mayo, and cheese. Handheld like traditional elote, but elotes in a cup a little less messy.
Mexican Street Corn Elote Bowls are inspired by one of my favorite food trucks at our local farmer's market. They are hand held and delicious!
My recipe is different than many of the elote style salads. The ingredients are layered and each one seasoned. I like to mix them together as I eat, and elotes in a cup is my favorite way to enjoy the flavors.
Ingredeints
- fresh corn - frozen corn can be used after it is thawed. I do not recommend canned corn.
- limes
- Tajin seasoning
- fresh chopped cilantro - dried cilantro can be used, but reduce the amount to 1 tsp.
- salt
- crumbled cotija cheese -crumbled feta can be used if you can't find cotija cheese.
- mayonnaise
What is Tajin seasoning?
Tajin is a brand name of a tangy and spicy seasoning from Mexico. The flavor comes from chilis and lime. It is a great contrast to creamy or sweet foods.
I love to use it on watermelon, mango, and pineapple as well.
Instructions
- Brush corn with oil. Preheat a grill to medium-high heat.
- Grill corn for about 10 minutes, rotating and turning every 2 -3 minutes.
- Remove corn from grill and allow it to cool so it can be handled.
- While the corn cools, mix together mayo, 2 teaspoon Tajin, juice of ½ a lime, and cheese. Set aside.
- Using a knife, cut the corn off of the cob. Place corn, juice from remaining lime half, salt, and cilantro.
- Divide corn into two small bowls, top with mayo mixture, sprinkle remaining Tajin on top. Garnish elotes in a cup with lime wedges and cilantro.
