Cheesy Taco Barley Skillet

Ingredients

  • 1 lb lean ground beef
  • ½ medium onion diced
  • 1 oz taco seasoning packet
  • 15 oz can black beans rinsed
  • 4 oz can diced green chilies
  • 1 ½ cups medium salsa
  • 2 ½ cups beef broth
  • ¾ cup uncooked medium barley
  • ½ teaspoon Salt
  • 1 ½ cup shredded cheddar cheese
  • sliced black olives
  • chopped tomatoes
  • sliced green onion

Instructions

  • Brown beef and onion until the beef is no longer pink and onion tender.
  • Add the taco seasoning and stir to coat. Add beans, chilies, salsa, broth, and barley.
  • Simmer 30-40 min or until barley is tender; stirring every so often to prevent burning.
  • Keep a little extra broth or water on hand in case you need to add extra. Season with salt if desired.
  • Top with cheese and allow it to melt. Top with desired taco toppings (example: sour cream, olives, and tomatoes).
