Meat Lovers Breakfast Casserole is the perfect start to a weekend or holiday morning. Bacon, ham, sausage, cheese, and eggs baked together to make a creamy, rich, and delicious breakfast everyone will love.

I love to make breakfast casseroles and breakfast bakes for holiday mornings. There is something so nice about a warm, hearty, and tasty breakfast that I can quickly pop in the oven. My Meat Lovers Breakfast Casserole is one of my family’s favorite breakfast recipes.

I prep everything the night before and let it sit overnight. This recipes includes crisp bacon, sausage, and smokey ham- plus lots of cheese. It is so good! I use bread as my base and allowing the bread to sit in the egg mixture overnight and once it is baked it is so creamy and custardy.

This casserole is fantastic as a meat lover variety, but if you like a few onions, peppers, or other veggie mix-ins they would be a delicious addition as well. However, one of my favorite parts is the yummy melted cheese sprinkled over the top of the casserole.

How do you make Meat Lovers Breakfast Casserole?

  1. Cut the bread into cubes. Lightly grease a 9×13 casserole dish and evenly place bread into the baking dish.
  2. Place chopped bacon over bread, but reserve 2 chopped slices for topping. Next, top with ham, and finish with the uncooked sliced sausage.
  3. In a medium bowl, whisk together eggs, milk, and pepper. Pour mixture evenly over the bread and milk. Top with 1/2 cup cheddar cheese.
  4. Cover casserole and place in fridge. Allow casserole to sit for at least 8 hours or overnight.
  5. Remove from fridge when ready to bake. Pre-heat oven to 350°F. Uncover and top with remaining 1 cup of cheese and remaining chopped bacon. Bake uncovered for 50 minutes. The center should still slightly jiggle when you remove it from the oven. Allow the casserole to rest for 5 minutes before serving.

Frequently Asked Questions

Can I use wheat bread?

Yes, but I do not recommend a super dense bread because it may not result is the nice custard egg texture.

Can I use chopped sausage patties?

Yes, just make sure to cut them into bite sized pieces.

Can I add the bacon without cooking prior?

Yes, the casserole will reach a high enough temperature to cook the bacon, but it will not be crisp.

What are other cheeses I can use besides cheddar, or that mix well with cheddar?

I love to use monterrey jack cheese or pepper jack is delicious in this recipe as well.

My casserole seems a little jiggly when I removed it from the oven- is this normal?

There should be a little jiggly in the casserole, and allowing it to rest for 5 minutes will allow it to come together and set a little more.

I am continuing on the leftover train to bring you some of my favorites as we get closer to Thanksgiving and the holidays. We always make a large turkey, and that means lots of leftovers. I talked about my love of “hot-shots” in my post for Roasted Garlic Mashed Potatoes (+ Turkey and Gravy), and about my favorite quick and simple leftover recipe in my post for Creamy Turkey over Biscuits. Today is all about the comfort food using holiday leftovers. Cheesy, cream, hearty, and filling all describe my Cheesy Broccoli, Turkey, and Rice Casserole. This is one damn good recipe my friends, and it is so perfect for a cold weeknight or a Sunday evening meal.

One of my favorite things about this casserole is that it uses fresh broccoli. I love the texture and flavor it brings to the casserole- and it is great if you have some leftover from the holiday veggie tray! The topping on this casserole is so yummy as well. I use a buttery crushed cracker to create a crispy topping that is so tasty! I typically have most of these ingredients on hand at all times which makes it an easy meal to put together. I don’t know about you, but I get some cooking burnout for a good 4 days after I do a holiday meal for my family, and I love having something easy that I can make with our leftovers.

How do I make Cheesy Broccoli, Turkey, and Rice Casserole?

  1. Pre-heat oven to 350°F. Spray a 9×13 casserole dish with cooking spray and set aside.
  2. In a large bowl, whisk together the soup, sour cream, 3/4 cup cheese, pepper, and garlic powder.
  3. Whisk in the chicken broth and milk.
  4. Stir in the rice, turkey, and broccoli.
  5. Pour into the prepared casserole pan. Cover with foil and bake in the oven for 40 minutes.
  6. When casserole has about 10 minutes left to cook prepare the cracker topping. Place crackers in a sealable bag and crush. Pour butter over crackers and toss to coat them evenly.
  7. Open the oven, remove foil, and sprinkle the remaining cheese over the casserole. Top with crackers and bake uncovered for an additional 10-15 minutes.
  8. Remove from oven and let the casserole sit for 3-5 minutes and serve.

Can I use chicken in this recipe?

Yes, chicken can be subbed for turkey.

Can I use a different type of canned cooking soup in this recipe?

If you do not want to use, or do not have, cream of chicken, cream of mushroom or cream of celery will work well.

Can I add other veggies to this casserole?

Yes, some cauliflower or mushrooms would be really tasty as well.

Can I use bread crumbs or a different cracker?

Yes, bread crumb work as do any comparable cracker for the topping.

My rice is not completely cooked- what can I do?

Make sure that you are keeping the casserole completely covered during the initial cooking- no peeking. If it needs a little more time you can bake it in the oven for another 10 minutes.

Creamy Turkey over Biscuits is a delicious way to use leftover turkey after Thanksgiving or Christmas. Shredded and warmed creamed turkey in an herb sauce and served over buttery biscuits make this a leftover to devour.

One of the best things about the holidays are the leftovers. However, there have been times that there is a little too much leftover turkey, and I get a bit tired of turkey sandwiches.

Today, I am sharing my first of a series of three recipes to help re-purpose leftovers to delicious meals and snacks everyone will love. Check in over the next few days to see recipes using holiday favorites like roasted turkey and cranberry sauce!

Meals from leftovers are one of my favorites, and create some of the most fun memories. One of my favorites is for “hot-shots” using leftover turkey, mashed potatoes, and gravy. You can see my post about them in my Roasted Garlic Mashed Potatoes (+Turkey and Gravy) post.

So, besides “hot-shots” and sandwiches I love to make Creamy Turkey over Biscuits. This recipe is pure comfort food, and so delicious if you need a hearty and quick meal. I know that many times after making the big holiday meal I need a day or two to recovers and rely on simple recipes, like this one.

What do you need to make Creamy Turkey over Biscuits?

  • Chopped and Cooked Turkey
  • Chicken Broth
  • Milk
  • Butter
  • Flour
  • Salt

How Do You Make Creamy Turkey over Biscuits?

  1. Prepare biscuits according to package instructions and prepare the creamy turkey while the biscuits cook.
  2. In a skillet melt the butter over medium heat. Whisk in the flour and cook, while whisking, for about 20 seconds.
  3. Whisk in the chicken broth and then the milk. Allow the sauce to slightly thicken while whisking, about 1 minute.
  4. Add the salt, pepper, and dried thyme and whisk.
  5. Add the chopped or shredded turkey and stir.
  6. Turn heat to low to keep warm if the biscuits are still cooking.
  7. Remove biscuits from the oven and plate. Top with warm cream turkey and enjoy.

The butter and flour mixture looks lumpy- am I doing something wring?

No, It does not need to look smooth because it will absorb into the liquid and thicken the creamy sauce. However, it should not look crumbly- that could mean there is too much flour. In that case you might need a little additional butter to get a wet sand consistency.

Can I use chicken in place of turkey?

Of course, sub on a 1:1 ratio.

Does the meat need to be cooked prior?

Yes, this recipe uses cooked meat. I have not tried this recipe starting the meat in a raw state.

Can I use leftover bread or roll in place of the biscuits?

Absolutely! Mashed potatoes are a good choice as well.

I do not have dried thyme. Can I use something else or omit the herbs all together?

Yes, the herbs can be left out of the recipe. You could also use parsley or marjoram.

My family loves mashed potatoes and we always have a giant bowl on our dining room table. Can I use a different type of potato?

Sure! Red skinned and Yukon will also work well in this recipe. However, other types may produce a different texture.

My potatoes are kind of gummy- what can I do?

Make sure when whipping the potatoes to add the milk slowly. If the potatoes are still a little heavy, slowly add a little more milk.

Can I use a different type of milk like 2%?

Yes, I like whole because it is creamier, but 2% will work just fine.

What is the best way to warm the potatoes?

I like to warm them in the microwave or oven with a few pats of butter on top.

Is the garlic super strong?

It all depends on how much you use. I call for 4 for this recipe, but you can add more or less depending on your preferences.

Let’s Talk Roasted Garlic!

Roasting garlic is one of the easiest enhancers around. I cut the tops off my garlic, place in foil, season with salt and pepper, and drizzle with olive oil. I use the foil to wrap around the garlic and I bake it at 375°F for about 40 minutes.

Here is the fun part.

Once the garlic is ready all you have to do is squeeze the bulb and out come all the yummy, soft, roasted garlic cloves!

THE LEFTOVERS

We all know one of the great things about holiday meals is the leftovers, and McCormick® can help with that! I typically have a bit of leftover turkey and potatoes after the holiday, but many times we have eaten all the gravy. I make the gravy with a little water and chicken stock and toss it with leftover warmed chopped or shredded turkey.

When I was a kid I remember being at my Grandma’s house for the holidays and after our holiday meal we always had “Hot-Shots” the following day. The “Hot-Shot” is shredded or chopped turkey over a piece of buttered bread with mashed potatoes, and finished with gravy. Whenever I think about leftovers that is the meat that immediately comes to mind.

Roasted Garlic Mashed Potatoes (+ Leftover Shredded Turkey and Gravy)

Ingredients

For Potatoes

  • 3 Lbs russet potatoes peeled and quartered
  • 6 tbsp salted butter
  • 2/3 cup whole milk
  • 1/2 tsp McCormick® Poultry Seasoning
  • 1 tsp McCormick® Ground Black Pepper
  • 1 tsp salt
  • Roasted Garlic (see instructions)

Roasted Garlic

  • 4 garlic bulbs
  • 1/4 tsp salt
  • 1/4 tsp McCormick® Ground Black Pepper
  • 2 tbsp olive oil

Turkey and Gravy

  • 4-5 cups shredded or chopped cooked turkey
  • (2) .87 oz packet ‎McCormick® Turkey Gravy

Instructions

Roasted Garlic

  1. Preheat oven to 375°F. Cut off top of garlic heads. Drizzle olive oil into a small baking dish. Place garlic in baking dish. Drizzle garlic with oil and sprinkle with salt and pepper. Cover baking dish with foil and roast until tender, 40 minutes.. Cool slightly and squeeze out garlic cloves.

Mashed Potatoes

  1. Boil potatoes until tender. Drain and place in a large mixing bowl. Add butter and mix with an electric mixer while slowly adding the milk. Stir in three garlic cloves from 3 garlic bulbs.

  2. Season with salt and pepper and cloves from remaining garlic bulb.

Turkey with Gravy

  1. Heat water and stock in a sauce pan over medium heat. Whisk in 2 packets of gravy mix. Pour 2/3 of the gravy into the turkey.

To Assemble

  1. Place warmed mashed potatoes on a plate. Top with turkey and gravy. Add additional gravy.

Slow Cooker Taco Chili is a delicious way to put a twist on family favorite. Filled with hearty meat, beans, taco seasonings, and veggies and topped with yummy taco toppings this will be everyone’s new favorite chili.

It feels like fall is officially here and that means my slow cooker starts to get a workout. One of m favorite fall meals is classic chili. I swear by my tried and true Meaty Chili. It never fails me. I always have a few bags of it in my freezer so I can eat it when the mood hits.

However, sometimes I like to change things a bit and try new flavors. One of my favorites is my Slow Cooker Taco Chili. This recipe could not get easier, and the flavors are incredible every time I make it. This chili always gets rave reviews because it is a little different than the norm, and it joins forces with the family favorite- tacos.

This recipe is slow cooked and packed with lots of goodies! It is tomato based and filled with chili beans, kidney beans, green chilies, taco seasoning, onion, jalapenos, green pepper, and beer. It is so delicious after getting hours of slow cooking time to get the flavors to blend perfectly.

  • 2 lb lean ground beef
  • 28 oz crushed tomatoes
  • 14.5 oz petite diced tomatoes

All the favors of a chili cooked slow and low, but adapted to be weeknight friendly! Pasta, lean ground beef, tomatoes beans, seasoning. cheese, and sour cream make a meal perfect for a chilly night, or a game day gathering!

We love chili in our house, and during the winter and fall some variation in on our menu at least a few times per month. My kiddos love pasta with their chili, and I knew I needed to create a- pasta rich- weeknight friendly recipe for one of our favorite meals.

My chili mac is so delicious, and it is even better than you though because it uses only ONE pot. There is nothing that makes my busy weeknights better than less dishes piled in my sink! This is also true for me when it come to entertaining during a Packer game- this meal is great for a minimal fuss meal plan.

My Chili Mac is packed with lean ground beef, tomatoes, tomato sauce, pasta, chili beans, kidney beans, cheese, and sour cream. It is so yummy and one of my all-time favorite comfort foods.

I do not like spicy- it there a lot of heat in this dish?

No, this is very mild. If you happen to be on the opposite side and like spice you can add a little diced jalapeno.

  • 1 1/2 lb ground beef or ground turkey
  • 8 oz tomato sauce
  • 14.5 oz can diced tomatoes

  • 3 Tbl chili powder
  • 1 Tbl garlic powder

Instructions

  1. In a medium to large pot, brown the ground beef. Drain excess grease and add remaining ingredients besides the pasta.  Lightly simmer for 5 minutes. 

  2. Stir in the pasta, cover and cook till pasta is tender stirring a few times to avoid sticking while the pasta cooks. Season with salt and pepper, if desired. 
  3. Serve immediately. Top portions with sour cream and grated cheese.

Spooky Pasta and Eyeballs is a savory Halloween meal that everyone will love. A simple meatball recipe with an olive makes a glaring eyeball. Served with pasta and a quick meat sauce make a ghoulish delight on fright night!

You guys. It is officially spooky time. October means that Halloween is getting closer, and it is my favorite holiday. I love creepy things, scary movies, costumes, and all the campy fun that Halloween has to offer.

One of my favorite things to do is to make Halloween themed dinners for the nights leading to, and the night of Halloween. My kids and I like to get into it, and they always have all sorts of suggestions for me.

Recently, my oldest wanted something with eyeballs, and I served him requested plate of Pasta and Eyeballs. This freaky dish incorporates a simple baked meatball with an olive to make an eyeball, a simple meat sauce, and pasta. It is so easy, and perfect to warm the bellies of your trick or treaters! I love the serve this is garlic bread to ward off the vampires, or breadsticks shaped as snakes!

This recipe is great for a party as well because the meatballs and sauce can be kept warm in the slow cookers after cooked, and the pasta is servable any time!

Yes, if you are using a salted cracker I would reduce the salt added to the meatballs to avoid them being too salty.

Can I use a combination of beef and pork for the meatballs?

Yes, just make sure the total weight for the meatballs is the same.

Can I use turkey for the meatballs and sauce?

I have not tested this meatball recipe with turkey to report results. However, ground turkey will work for the sauce on a 1:1 ratio.

What type of pasta sauce do you recommend?

I just use a traditional jarred sauce for this recipe. I have homemade recipe, but I typically make this on Halloween and shortcuts are essential!

Can I use black olives for the eyes?

Sure, I love the look of the green olive, but black works too. You could even stuff a pimento into the black olive to get the red look.

Ingredients

  • 2 lbs lean ground beef, divided
  • 1/2 diced white onion
  • 24 oz pasta sauce
  • 3/4 cup pankp bread crumbs
  • 2 large eggs
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
  • 1 tbsp dried parsley flakes
  • 1/4 cup milk
  • 1 tbsp sour cream
  • 1 tbsp Parmesan cheese
  • 1 lb shaped pasta
  • 20 green olives

Instructions

For the meatballs:

  1. Pre-heat oven to 350°F. Line a baking sheet with parchments paper or foil. Set aside.

  2. Place 1 1/4 lbs of ground been into a bowl. Add breadcrumbs, eggs,salt, pepper, parsley garlic powder. Add eggs, milk, and sour cream. Gently mix with hands till evenly mixed.

  3. To assemble, take a ball of meat and fit it around a green olive so the pimento is showing. Repeat until you run out of meat.

  4. Place meatballs on the baking sheet. Once completed, Coo in the over for 20 minutes.

For spaghetti sauce:

  1. Place renaming ground beef in a skillet. Add diced onions.

  2. One the beef is cooked and onions tender, add the pasta sauce. Allow sauce to simmer while the meatballs cook.

For Assembly:

  1. once finished, place pasta in the bowl, then the add meatballs and sauce.

How do I make Beer Cheese Chicken Skillet?

  • Season chicken with McCormick® ONE Seasoning Mix: Farmer’s Market on both sides.
  • Heat olive oil in a skillet over medium heat. Place chicken in the skillet and cook on each side.
  • Remove chicken from skillet and add the garlic. Cook for about a minute and whisk in the beer.
  • Next, add the chicken broth and simmer for 5 minutes.
  • Add the heavy cream and lightly simmer for an additional 5 minutes. Whisk in the cheese.
  • Add the chicken to the sauce, top with cheese, and simmer for an additional 5 minutes.
  • Plate chicken with mashed potatoes and a seasonal veggie or salad. Drizzle beer cheese sauce on top of the chicken.

Can I use chicken thighs?

Yes, but you cook like will decrease and it is important to make sure that you are using a meat thermometer to make sure that the chicken is properly cooked to an internal temperature of 165°F.

Will a non-alcoholic beer work?

Absolutely! I recommend a light beer with an NA beverage or an alcoholic beer.

Can I use a different cheese besides sharp cheddar?

Yes, it will change the flavor profile, but pepper jack or a mild cheddar would be delicious.

I am having trouble with my chicken getting too much color in the skillet, what can I do?

Make sure that you do not have the heat too high. Also, if you are working with a larger chicken breast you may experience this because it is a longer cooking time. You may want to reduce the size of the chicken to make sure all pieces are evenly sized.

Can I use milk in place of cream?

Your sauce will not thicken properly without the cream. If you need to use milk I recommend a whole milk but, again, the thickness of the sauce will be impacted.

  • 1 1/4 lbs boneless skinless chicken breasts (about 4 pieces)

  • 1/2 cup low sodium chicken broth
  • 2/3 cup heavy cream
  • 1 cup shredded sharp cheddar

  1. Place chicken on a plate and season both sides with the contents of the  McCormick® ONE Seasoning Mix: Farmer's Market.

  2. In a heavy bottomed skillet, heat olive oil over medium heat. Place chicken into the skillet and cook 5 minutes per side.

  3. Remove chicken from skillet. Add garlic and cook for 1 minute.

  4. Whisk in the beer. Next, add the chicken broth and simmer 5 minutes.

  5. Add the cream and simmer and additional 3-5 minutes to allow cream to thicken enough to coat the back of a spoon. Whisk in the cheese till melted.

  6. Add the chicken to the skillet, top with a little additional cheese and lightly simmer 5 minutes.

  7. Using an instant read thermometer, check chicken in thickest part of the breast to ensure that the internal temperature is 165°F.

Quick and Easy Pizza Bagels are an easy weeknight meal or a fantastic after school snack! Mini bagels, savory pizza sauce, mini pepperoni, creamy melty cheese, and Italian seasoning make an amazing bite!

I find that I am pretty resourceful in the kitchen. However, one thing that I always struggle with is lunch for my kiddos on the weekends. During the week my kids take hot lunch at school, or I pack a cold lunch depending on the day. However, weekends always get me because I forget to plan for lunch for the kids. Many times we are out doing stuff, and we resort to a drive-thru for them.

My Quick and Easy Pizza Bagels are one of my weekend favorites for lunch. They are fast, and I can keep the ingredients on hand for when I need them.

My boys are pretty easy when it come to pizza- especially my youngest who is 3. My youngest likes as many topping as you can fit on a pizza, and my oldest love pepperoni, sausage, and olive. This recipe might now pile on the toppings, but it is loved by both my kiddos.

I make it simple: plain mini bagels, sauce, cheese, mini pepperoni, and a little Italian seasoning. Baked in the oven until the cheese is melty, pepperoni nice and warm, and topped with a little Italian seasoning makes one amazing kiddo loved dish!

You could, of course, add different topping or just go with cheese. That is the beauty of these- completely customizable!

I have also made these for my kiddos to bring for lunch during the week as well. They love putting together the pizzas right out of their lunch boxes.

We are here- time for tried and true weeknight meals because school is starting. We are soaking the final days of summer before my kiddos go back to school on Tuesday- I can’t believe my oldest is in 1st grade…. I know those who have older kids are “just you wait”-ing me right now but, to me, it feels like it has gone too fast. Skillet Rice and Beans with Kielbasa is delicious and a meal ready in 30 minutes!

This recipe is also fantastic because it uses pantry staples like rice, pint beans, chicken broth, dried herbs, and seasonings. So simple, and so quick for a weeknight meal.

My kiddos love this skillet meal. They typically each all of the rice and beans, and save to sausage for last- which they happily dip in ketchup. Sometimes they go into these anti-bean phases, but right now they are cool with the beans. However, as you know kids, that will probably change in the next 5 minutes!

Anyways, this recipe is a family favorite, and you will love the simplicity and it makes great leftovers for lunch the next day. Lunch leftover quality is always a big thing for me since my husband and I both like to bring leftovers in our lunchboxes.

Ingredients

  • 1 tbsp olive oil
  • 1 tbsp butter
  • 14 oz kielbasa (we use turkey), sliced and halved
  • 1/2 medium white onion, diced
  • 1 cup white rice
  • 2 cups low-sodium chicken broth
  • 14 oz can pinto beans, drained and rinsed
  • 1/2 tsp dried Italian seasoning
  • 1/2 tsp garlic powder
  • 1 tbsp dried parsley
  • salt and pepper, to taste

Instructions

  1. Heat the oil and butter over medium-high in a large rimmed skillet (make sure your skillet has a lid!). Add the sausage and onion, and sauté until onions become soft.

  2. Stir in the rice and cook for an additional minute while stirring.

  3. Add the chicken broth, beans, Italian seasoning, garlic powder and parsley. Bring to a boil. Cover, reduce heat to medium-low, and simmer for 20 minutes or until rice is tender. Make sure to occasionally stir to prevent burning.

  4. Remove from the heat and season with salt and pepper if desired.
