Octoberfest Stew

My Octoberfest Stew is packed seasonal vegetables, smoked sausage, bratwurst, German lager, and potatoes in a rich creamy broth.

Ingredients

  • olive oil
  • white onion
  • carrots
  • garlic
  • smoked sausage
  • bratwurst
  • flour
  • russet potatoes
  • German lager
  • chicken broth
  • water
  • sauerkraut
  • salt
  • black pepper
  • caraway seeds
Chopped cooked carrots, onions, sausage, bratwurst, and potatoes in a creamy broth served in a white bowl.

Instructions

  1. In a large dutch oven, heat olive oil over medium heat.
  2. Add the onions and carrots and cook till onions are tender and carrots begin to soften.
  3. Add the garlic and cook for an additional minute.
  4. Sprinkle in the flour to the vegetables and stir.
  5. Add the potatoes and beer. Stir and bring to a low simmer.
  6. Add the sliced sausage and bratwurst.
  7. Follow with the broth, water, sauerkraut, salt, pepper, caraways seeds.
  8. Allow soup to lightly simmer, stirring frequently, until the potatoes and carrots are tender.
  9. Serve and enjoy.
