My Octoberfest Stew is packed seasonal vegetables, smoked sausage, bratwurst, German lager, and potatoes in a rich creamy broth.
Ingredients
- olive oil
- white onion
- carrots
- garlic
- smoked sausage
- bratwurst
- flour
- russet potatoes
- German lager
- chicken broth
- water
- sauerkraut
- salt
- black pepper
- caraway seeds
Instructions
- In a large dutch oven, heat olive oil over medium heat.
- Add the onions and carrots and cook till onions are tender and carrots begin to soften.
- Add the garlic and cook for an additional minute.
- Sprinkle in the flour to the vegetables and stir.
- Add the potatoes and beer. Stir and bring to a low simmer.
- Add the sliced sausage and bratwurst.
- Follow with the broth, water, sauerkraut, salt, pepper, caraways seeds.
- Allow soup to lightly simmer, stirring frequently, until the potatoes and carrots are tender.
- Serve and enjoy.
