Zucchini and Bacon Quiche

My Zucchini and Bacon Quiche is a delicious way to use your summer zucchini harvest. Packed with fresh zucchini, basil, cheese, and bacon. Perfect to make in advance for breakfast or a quick meal.

I live in Wisconsin and our growing season is not long because of the cold winter months. I love enjoying fresh summer produce and zucchini is one of my favorite things to eat.

Typically, I make a lot of grilled zucchini in the summer as well as quick breads, like my Banana Zucchini Crumble Bread. However, I love to have a savory breakfast and something I can easily grab.

Quiche is a favorite of mine because it is easy to make and I can eat it for a few days. My Bacon and Zucchini Quiche is delicious and filled to the brim with ingredients.

I love bacon and zucchini together. Add fresh basil and some melty cheese, and I am very happy.

To save time, I typically use a frozen pie crust, but a homemade pie crust is absolutely delicious as well.

Ingredients

  • zucchini
  • fresh basil- Dried basil will work fine as well in my Zucchini and Bacon Quiche .
  • eggs
  • bacon - Pre-cooked bacon is a great time saver! You could also use diced ham in place of the bacon.
  • cheddar Jack cheese- Mozzarella or cheddar will work great too.
  • green onion - Substitute any fine diced onion for the green onion.
  • half and half
  • salt
  • black pepper
  • 1 9-inch regular pie frozen crust

Instructions

  1. Pre-heat oven to 350 degrees F.
  2. In a medium bowl whisk all ingredients together. Set aside a little bacon to top at the end.
  3. Pour egg mixture into pie crust and top with remaining bacon. Place pie on a baking tray and place on middle oven rack.
  4. Bake 35-40 minutes. The center should be set when given a gentle shake. If the center still shakes bake an additional 5 minutes.
  5. Remove quiche from oven and rest at least 15 minutes. After cooking, serve or cover to keep in the fridge.

  • 1 ½ cups grated zucchini

  • ⅓ cup cheddar Jack cheese

  • 1 cup half and half
  • ¼ teaspoon salt
  • ½ teaspoon black pepper

    Not sure of your last comment in instructions...remove quiche from oven and cook at least 15 minutes??? Cook it where??
