Pumpkin Meatballs in a Creamy Tomato Sauce

My Pumpkin Meatballs in a Creamy Tomato Sauce and a delicious start to the fall season. Pumpkin added to the meatballs and the sauce creates a savory and delicious dinner!

Pumpkin recipes are one of my favorite parts of fall. I am more of a savory food lover than a sweet food lover, and my Pumpkin Meatballs in a Creamy Tomato Sauce is one of my favorite seasonal savory dinner recipes.

I use pumpkin puree (not the pie filling!) in the meatballs and the sauce. The pumpkin keeps the meatballs nice and juicy and the puree added to the pasta sauce is nice and rich.

Pumpkin is a great compliment in a savory dish. I love to use it in chili, beef stew, and pasta sauces. Pumpkin has a light sweetness to it, and it is great when used to make a hearty fall meal.

Ingredients

Meatballs

  • lean ground beef- ground turkey works great too!
  • pumpkin puree
  • unseasoned breadcrumbs
  • large egg
  • milk
  • ground sage
  • salt
  • black pepper

Sauce

  • pasta sauce
  • pumpkin puree
  • heavy cream
  • spaghetti
  • Grated parmesan, for topping

Instructions

  1. Preheat the oven to 350°F. Line a baking sheet with foil and spray lightly with cooking spray and set aside.
  2. Add ground beef and all meatball ingredient into a large bowl. Gently mix by hand and roll into medium sized meatballs.
  3. Place meatballs on the baking sheet. Bake for 20 minutes or internal temperature reached 165°F.
  4. While the meatballs are cooking, place the pasta sauce and pumpkin puree into a large rimmed skillet. The skillet should be large enough to all all the meatballs to the sauce when they finish baking.
  5. Heat sauce on medium low. While sauce and meatballs cook, cook the pasta according to package instructions. Drain and set aside.
  6. Once meatballs have cooked, remove them from the oven and add them to the sauce. Stir in the heavy cream and simmer for 5 minutes.
  7. Serve meatballs over cooked pasta and top with parmesan cheese.

Meatballs

  • 1 ¼ lb lean ground beef
  • ¼ cup pumpkin puree
