My family loves mashed potatoes and we always have a giant bowl on our dining room table. The traditional recipe of potatoes, butter, salt, pepper, and whole milk is given a fun twist with roasted garlic. Roasting garlic at home with a little salt and McCormick® Black Pepper is a simple and yummy way to elevate your holiday recipes.

I don’t think that my family would allow me to come to the table with out a bowl of warm, creamy, buttery mashed potatoes. For me, that is a staple and a must-have. Besides being excellent for soaking of juices, flavors, and gravies, mashed potatoes are great because almost everyone likes them, and I know my kiddos always request a big scoop on their plates.

Frequently Asked Questions

Can I use a different type of potato?

Sure! Red skinned and Yukon will also work well in this recipe. However, other types may produce a different texture.

My potatoes are kind of gummy- what can I do?

Make sure when whipping the potatoes to add the milk slowly. If the potatoes are still a little heavy, slowly add a little more milk.

Can I use a different type of milk like 2%?

Yes, I like whole because it is creamier, but 2% will work just fine.

What is the best way to warm the potatoes?

I like to warm them in the microwave or oven with a few pats of butter on top.

Is the garlic super strong?

It all depends on how much you use. I call for 4 for this recipe, but you can add more or less depending on your preferences.

Let’s Talk Roasted Garlic!

Roasting garlic is one of the easiest enhancers around. I cut the tops off my garlic, place in foil, season with salt and pepper, and drizzle with olive oil. I use the foil to wrap around the garlic and I bake it at 375°F for about 40 minutes.

Here is the fun part.

Once the garlic is ready all you have to do is squeeze the bulb and out come all the yummy, soft, roasted garlic cloves!

THE LEFTOVERS

We all know one of the great things about holiday meals is the leftovers, and McCormick® can help with that! I typically have a bit of leftover turkey and potatoes after the holiday, but many times we have eaten all the gravy. The “Hot-Shot” is shredded or chopped turkey over a piece of buttered bread with mashed potatoes, and finished with gravy. Whenever I think about leftovers that is the meat that immediately comes to mind.

Roasted Garlic Mashed Potatoes (+ Leftover Shredded Turkey and Gravy)

Ingredients

For Potatoes

  • 3 Lbs russet potatoes peeled and quartered
  • 6 tbsp salted butter
  • 2/3 cup whole milk
  • 1/2 tsp McCormick® Poultry Seasoning
  • 1 tsp McCormick® Ground Black Pepper
  • 1 tsp salt
  • Roasted Garlic (see instructions)

Roasted Garlic

  • 4 garlic bulbs
  • 1/4 tsp salt
  • 1/4 tsp McCormick® Ground Black Pepper
  • 2 tbsp olive oil

Turkey and Gravy

  • 4-5 cups shredded or chopped cooked turkey
  • (2) .87 oz packet ‎McCormick® Turkey Gravy

Instructions

Roasted Garlic

  1. Preheat oven to 375°F. Cut off top of garlic heads. Drizzle olive oil into a small baking dish. Place garlic in baking dish. Drizzle garlic with oil and sprinkle with salt and pepper. Cover baking dish with foil and roast until tender, 40 minutes.. Cool slightly and squeeze out garlic cloves.

Mashed Potatoes

  1. Boil potatoes until tender. Drain and place in a large mixing bowl. Add butter and mix with an electric mixer while slowly adding the milk. Stir in three garlic cloves from 3 garlic bulbs.

  2. Season with salt and pepper and cloves from remaining garlic bulb.

Turkey with Gravy

  1. Heat water and stock in a sauce pan over medium heat. Whisk in 2 packets of gravy mix. Pour 2/3 of the gravy into the turkey.

To Assemble

  1. Place warmed mashed potatoes on a plate. Top with turkey and gravy. Add additional gravy.

It is likely becoming less and less obvious that I just love shortbread. I love to make it and I love eating it even more. Today is the last day of Christmas Cookie Week, and I wanted to end with one of my favorite simple shortbread cookie recipes.

These cookies are so buttery and delicious. Even though they are rich they are so light and flaky when you bite into one. I opted to stud these cookies with pecans from our sponsor Millican Pecan Company. I love to use the pecan pieces in this recipe. The size is perfect for the cookie, and only required a quick couple of chops from me before I mix them into the cookie dough.

These cookies will be a favorite on any cookie platter. They are also delicious dipped half way into chocolate! I opted to go sans chocolate this time, but will likely opt for a quick chocolate dip for a cookie exchange.

What do you need to make Butter Pecan Shortbread Cookies?

How do you make Butter Pecan Shortbread Cookies?

{Printable recipe below}

1. Using a stand mixer, cream butter, powdered sugar, vanilla, and salt until smooth. 

2. Mixing on low speed, slowly, add flour until combined. Add chopped pecans and stir to mix.

3. Remove dough from mixer and place on parchment paper. Form into a 12- to 14-inch log. It is easier to get a uniform log is you start the dough at one side of the paper, form, and then roll it into a log.  freeze at least 30 minutes or until firm. Note: If you freeze the dough for longer than 30 minutes let it sit for 20-30 minutes so you are able to cut it and get even slices.  If your slices are not even rounds the cookies will not cook evenly.

4. When ready to bake the cookies, preheat oven to 350°F. Cut the shortbread dough into 1/3 -1/2-inch slices and bake for 12-13 minutes on parchment lined or slip-mat lined baking sheets. Remove from oven and allow cookies to cool a few minutes in the pan and then on parchment paper on the counter.

Frequently Asked Questions

I am having a hard time cutting the cookies- any tips?

My sure that your dough is not too frozen. If it is it tends to give uneven slices and it hard to slice.

My cookies seem dry- should I be adding more butter or an egg?

No, shortbread is not a moist soft cookie. It is a bit crumbly and very buttery. You do not want to cookies to be too soft. When the cookies first come out of the oven they will be soft, but will set as they cool.

Can I use a different type of nut?

I have not experimented with this before so I can’t recommend anything but pecans, but I do think walnuts or almonds would work well.

Butter Pecan Shortbread Cookies

“You’re a mean one Mr. Grinch….”. A favorite holiday character inspires a tasty Christmas cookie- Grinch Shortbread Cookies. A simple, sweet, and buttery recipe with a tinge of green and the Grinch’s growing heart.

The Grinch Who Stole Christmas is my favorite holiday movie. I always find myself singing a lot and laughing at The Grinch and his sneaky ways. My boys love the movie as well and we end up watching it numerous times during the holidays. We have watched the different versions of the movie, and we are a strong vote for the original version.

To give a little nod to my favorite holiday movie character I am sharing my recipe for Grinch Shortbread Cookies. These cookies are delightfully easy, and so festive for a cookie exchange or a holiday cookie tray. I use my traditional shortbread base, a bit of green color, and a heart sprinkle for the Grinch’s heart when it was still “three sizes too small”.

I use my recipe for Peppermint Shortbread Cookies and omit the peppermint to get the base of these cookies. This recipe is so simple, and one of my all-time favorite cookies recipes.

Hot Chocolate Chip Cookies

Hot Chocolate Chip Cookies are a holiday favorite. They have a rich chocolate flavor, chocolate chips, and marshmallows!

There is nothing like a cup of hot chocolate on a cold day. I have vivid memories of ice skating as a kid, and the happiness of that cup of hot cocoa after the skate. My kiddos love when I make hot chocolate after they play in the snow. Their cold little fingers grip the cup, and the drink every drop in their mugs. They typically want to head out to the snow again- play, come in, drink hot chocolate- repeat.

Enter Hot Chocolate Chip Cookies. All the flavors of winter’s favorite drink, but in cookie form- chocolaty, warm, and gooey out of the oven. I love how easy these cookies are to make, and they are perfect for a holiday cookie exchange! One of my favorite parts in the mini marshmallows in the cookies because they get soft after they bake. My kiddos love to devour these cookies with a tall glass of milk.

What do you need to make Hot Chocolate Chip Cookies?

How do you make Hot Chocolate Chip Cookies?

{Printable recipe below}

  • Beat butter and sugar in large bowl with standing mixer until fluffy. Beat in eggs and vanilla.
  • In a different mixing bowl, combine dry ingredients. Slowly beat the dry ingredients into the wet ingredients. Stir in chocolate chips and Marshmallow Bits. Cover and chill for 30 minutes-2 hours.
  • When ready to bake, preheat oven to 350°F. Drop 2 tablespoons of dough, 2 inches apart, onto baking sheets lined with baking mats or parchment paper. Add 3-4 additional Marshmallow Bits to each cookie.
  • Bake 9 to 10 minutes.

Frequently Asked Questions

Can I freeze the cookie dough?

Yes. Typically, I like to portion the dough and then thaw it when I bake. To portion, scoop 2 tablespoon amounts and freeze on a cookie sheet. Store in a freezer bag till you are ready to thaw and bake. The dough can also be frozen as one portion as well. Note: freezing might impact the integrity of the marshmallow bites and you might want to add extra to the top when thawed.

What type of hot chocolate mix should I use?

I use a basic milk chocolate mix. You can use dark chocolate or the rich flavoring. I do not recommend using sugar-free.

Can I use regular mini marshmallows?

No, they will melt and it will be very sticky.

How long can I keep the dough in the fridge?

4-5 days in an sealed container. If you are keeping it more than 48 hours you might want to add the marshmallow bits when you are ready to bake.

Hot Chocolate Chip Cookies

Ingredients

  • 1/2 cup butter softened
  • 2/3 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups flour
  • 2 packages hot cocoa mix
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 cup chocolate chips
  • 1/2 cup Mallow Bits
US Customary – Metric

Instructions

  1. Beat butter and sugar in large bowl with standing mixer until fluffy. Beat in eggs and vanilla.
  2. In a different mixing bowl, combine dry ingredients. Slowly beat the dry ingredients into the wet ingredients. Stir in chocolate chips and Marshmallow Bits. Cover and chill for 30 minutes-2 hours.
  3. When ready to bake, preheat oven to 350°F. Drop 2 tablespoons of dough, 2 inches apart, onto baking sheets lined with baking mats or parchment paper. Add 3-4 additional Marshmallow Bits to each cookie.
  4. Bake 9 to 10 minutes.
  5. Cool on baking sheets 3 minutes and then move to racks or parchment to finish cooling.

What are some of your favorite holiday baking traditions? Like I said, I have a cookie exchange with a few of my girlfriends in December. We sip drinks, eat and exchange cookie, and make a pot a chili to enjoy as we chat and enjoy our sweets. Last year I brought my Easy Peppermint Shortbread and White Chocolate Dipped Gingerbread Cookies, and they where a hit! I am thinking that I might need to make these cookies this year.

Eggnog Snickerdoole Cookies

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 1 egg
  • 1/3 cup eggnog
  • 1 tsp vanilla
US Customary – Metric

Instructions

  1. In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.

  2. In the bowl of a stand mixer with a paddle attachment, beat the butter until smooth. Add sugar and mix on medium speed until creamy.

  3. Scrape the sides of the bowl. Add the egg, and beat until combined. Add the eggnog and vanilla and beat on medium-high speed until the dough is fluffy.

  4. Add the flour mixture and beat on low just until combined.

  5. Cover the dough refrigerate for at least 2 hours.

  6. Preheat oven to 375F degrees and line a baking sheet with parchment paper or a baking mat.

  7. In a bowl, combine the sugar and cinnamon.

  8. Form dough into 1-inch balls, roll in the cinnamon sugar, then place on the baking sheet, about 2 inches apart. Bake for 8 minutes.

The dough can remain in the fridge for up to 5 days.

Fresh cranberries simmer in white rum, vanilla, and sugar to make a rich and bold sauce. Slightly sweet and slightly tart this spirited cranberry sauce is perfect for a holiday table.

It is the final day of cranberry week and I saved one of my favorite cranberry sauce recipes for last.

Cranberry sauce is a holiday favorite, but have you tried it with rum and vanilla?! This cranberry sauce uses my favorite white rum and a bit of vanilla. I also like to use a little cinnamon and, of course, sugar. The sauce has a beautiful sweet and tangy flavor, but with a hint of cinnamon.

During the holidays, I like to switch my cranberry sauce flavors around, but this combination is always requested. I love to make cranberry sauce because it is so easy, and it can be made in advance, frozen, and thawed for the festivities. I also love to use my extra sauce for baking quick breads and muffins.

Can I use spiced rum?

Yes, but the flavor will be slightly different. I prefer the white rum, but dark rum work nicely with the ground cinnamon

My cranberries seem a little too watery- what should I do?

They are likely just fine. Let them chill in the fridge and they will thicken and set as they rest.

Can I use brown sugar?

Sure, it will add a slight caramelized flavor, but it is delicious.

I let the berries cook to long and the sauce is very thick- can I use it?

Yes, make sure it is not burned (you will be able to taste it) because if it is there is not a way I know to bring it back, and you may need to start over. If the sauce is just thick from extra simmer time it is just fine. You can add a little water to thin it if you like.

Vanilla Rum Cranberry Sauce

Ingredients

  • 12 oz fresh cranberries
  • 3/4 cup sugar
  • 1/2 cup white rum
  • 1 tbsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/2 cup water

Instructions

  1. In a medium sauce pan, add cranberries, sugar, rum, vanilla, cinnamon, and water.

  2. Bring cranberry mixture to a low boil. Reduce heat and partially cover the top of the sauce pan. Lightly simmer for 15 minutes, stirring at the halfway point. Cranberry skins will pop and begin to form a sauce.
  3. Turn off the heat and allow the sauce to cool before transferring to a storage container. Cover and chill for 1 1/2 – 2 hours. The sauce will thicken as it cools.

The sauce can be made up to 2 weeks in advance and stored in a sealed container in the fridge


Slow Cooker Cranberry Meatballs

The holidays are a time for enjoying laughs, food, and quality time with friends and family. These Slow Cooker Cranberry Meatballs are the perfect simple recipe for a festive holiday party. Homemade meatballs, cranberry sauce, chili sauce, and cranberry juice make a meatball your guests will rave about!

One of the best parts of the holidays is the tasty food and drinks! Coca-Cola® shares the magic this season by capturing the micro-moments of the holidays. I am a mom of two little boys, and I know that having a few moments to myself can be hard, especially during the holiday, but those are the moments I give myself a chance to indulge. The first sip of a fresh Coca-Cola® is my favorite. Crisp, fizzy, refreshing, and the little boost that keeps me smiling as I prepare to host my friends and family. Sometimes, it is a small get together, a holiday movie night, a cookie exchange, or a few snacks before a day in the snow. Coca-Cola® is holiday to me, and always part of my holiday prep- and to serve when entertaining!

When I was a kid, who am I kidding- I still do, I counted down the days for the holiday polar bear commercial to air because it officially felt like it was time to celebrate. One of my favorite holiday and entertaining recipes is Slow Cooker Cranberry Meatballs. The meatballs are made from scratch and then placed in the slow cooker with a delicious sweet and tangy sauce! I love this recipe because the meatballs can easily be made in advance (or even frozen) before you need them which creates easy entertaining prep!

The sauce is cranberry sauce, chili sauce, and a little cranberry juice to make a rich, tangy, and sweet sauce for the meatballs. I keep my heat low, and then switch to warm when I am ready to serve to make sure they are at the perfect temperature for my guests.

What do you need to make Slow Cooker Cranberry Meatballs?

  • Ground Beef
  • Cranberry Sauce – I do not use whole berry for this recipe
  • Chili Sauce
  • Tart Cranberry Juice
  • Slow Cooker
  • Cookie Sheet

How do you make Slow Cooker Cranberry Meatballs?

  • Make a slurry for the meatballs. A slurry is a term I use to describe the binder for the meatballs: bread, milk, water, and eggs. The bread is soaked in the milk and water. The bread is then blended with the eggs to create a smooth binder. I prefer blending this portion of the recipe because it helps prevent over mixing the meatballs.
  • Mix the beef and slurry together.
  • Scoop the meatballs on to a lined baking sheet and bake for 25 minutes at 350°F. A cookie scoop works well for this!
  • Remove meatballs from the oven and allow them to slightly cool. Place in a slow cooker with cranberry sauce, chili sauce, and juice. Cook on low for 4 hours, and serve.

Why soak the bread? I love this method because it really helps soak in all the moisture from the liquid. When blended and mixed I find that it gives a very even texture to the meatballs. It also helps prevent over-mixing the ingredients.

What is the best way to get perfectly round and even meatballs? I like to use a cookie scoop to get a uniform size. Typically, I prefer a 1 1/2 tablespoon size because it is still bite sized, but does not overcook as easily to make sure the meatballs and nice and juicy.

When all the ingredients are ready I place them in my slow cooker so it can do the work while I prep for my guests and grab a bottle of Coca-Cola®.

Getting my table set and everything in place is important to me because it maximizes my time, and makes my preparations easier. A ready slow cooker, serving bowls and spoons, toothpicks, festive plates and napkins, and a refreshing drink are some of my staples!

The sauce becomes warm and smooth, and the meatballs are ready to serve! I love to grab a few festive holiday plates and napkins, as well as toothpicks when I serve these meatballs to my friends and family.

Slow Cooker Cranberry Meatballs

Ingredients

  • 2 lb ground beef
  • 2 slices white bread
  • 1/4 cup water
  • 2/3 cup whole milk
  • 2 eggs
  • 1/2 white onion, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3/4 cup tart cranberry juice
  • 12 oz bottle chili sauce
  • 14 oz can jellied cranberries
US Customary – Metric

Instructions

  1. Pre-heat oven to 350°F. Line a sided baking sheet with a mat or foil. Set aside.

  2. Place bread, water, and milk in a bowl and allow bread to soak for 5 minutes.

  3. Place bread and any remaining liquid into the food processor. Add eggs and onions. Add salt and pepper. Pulse until smooth.

  4. Add the bread mixture to the ground beef. Mix by hand until it is well incorporated.

  5. Using a 1 1/2 tablespoon cookie scoop form the meatballs, roll in your hands, and place the meatballs on the cookie sheet. Repeat until you have used all of the meatball mixture. Note: if you do not have a cookie scoop use a regular measuring spoon to get the correct amount and then you can eyeball it from that point.

  6. Bake for 25 minutes. Remove from the oven and allow the meatballs to rest for about 2-3 minutes.

Cranberry Pecan Mini Cheese Balls are the perfect bite sized holiday appetizer. Rolled into a popable bite is cream cheese, goat cheese, and dried cranberries. Rolled in crushed pecans and a convenient pretzel holder make this a favorite finger food bite!

Cranberry week is still going strong and I am sharing one of my easiest and favorite holiday bites! Cranberry Pecan Mini Cheese Balls are so simple to make, and always a crowd pleaser at a get together. I like to pop them right into my mouth, but you can also eat them with a few extra pretzels for dipping. These mini cheese balls are filled with cream cheese, goat cheese, and dried cranberries. I use my food processor to get a nice smooth evenly mixed cheese ball. I use pecans for the coating and I pulse them a few times in my food processor to get them nice and fine and perfect for an outer layer of the mini cheese ball. I top my cheese balls with a pretzel stick because it makes them perfect for grabbing.

It is Cranberry Week! Sugared Sparkling Cranberries are a holiday treat everyone will love. Fresh cranberries, soaked in simple syrup, rolled in fine sugar, and dried create the perfect sweet and tart treat for any cranberry lover. They are also fantastic as a decoration on a cake.

Cranberry Week is here! I am teaming with a few friends to bring you all things cranberry this week. The cranberry is so much more than sauce (don’t worry I will have a recipe for the later this week). They are awesome for baking, appetizers, and treats as well. I love the tart sweet flavor of cranberries paired with savory holiday food, but I also love them on their own in a drink, or in this case, as a bite-sized snack!

These Sugared Sparkling Cranberries are one of my favorite treats. They are soaked in a simple syrup, tossed in a fine sugar, and then allowed to dry so the sugar creates a crust around the sweetened tart cranberry. It is such a wonderful texture and the taste is like a cranberry juice cocktail. I love to make these for parties, or to use when decorating a cake.

Why is important for the simple syrup to be hot? Can I make it in advance for soaking?

The hot syrup causes cracks in the cranberries and allows them to better soak in the sweet syrup.

What is the difference between baker’s sugar and granulated? Can I just use granulated?

Baker’s sugar is very fine. I have tested this recipe using granulated for the rolling, and it does not have the result I wanted. The sugar is too course to stick to the cranberries like the baker’s sugar. Granulated is fine to make the syrup, but I do not recommend it for the rolling part of the recipe.

Can I make these in advance?

I recommend 1-2 days for in advance.

What can I use the syrup the cranberries soak in for?

I like to use it for drinks! I have also used it to soak or brush on top of baked goods.

How do I serve these cranberries?

I serve them in a bowl, or I like to use them as a garnish for baked goods- like a cake- like my Cranberry White Chocolate Layer Cake.

Sugared Sparkling Cranberries

Ingredients

  • 2 cups granulated sugar
  • 2 cups water
  • 16 oz fresh cranberries
  • 3/4 cup superfine sugar or baker’s sugar
US Customary – Metric

Instructions

  1. Wash cranberries, strain, place in a medium bowl, and set aside.

  2. In a medium saucepan, combine the granulated sugar and water and cook over medium heat, until the sugar dissolves. Bring to a simmer, and remove from heat.

  3. Pour the simple syrup (sugar water) over the cranberries. Stir to coat. Cover a refrigerate for 8 hours (a little longer is fine).

  4. Pour the fine sugar into a medium bowl. Remove cranberries from fridge and drain. Put cranberries into the bowl with the sugar and gently stir to evenly completely coat.

  5. Place cranberries on a cookie sheet. Place in fridge for 2 hours to allow sugar to harden and set. Store in the fridge in a covered container. The berries will store for about 2 days before the juices begin to dissolve the sugar.

Today I am sharing one of my favorite quick and easy sides- 5-Ingredient Corn Casserole. This is a go-to side dish for me when I am trying to put together a menu, and just need “one more thing” to make it perfect. This dish is prepped in minutes, and is versatile enough to serve with pretty much any of your holiday favorites.

This casserole is filled with whole kernel corn, creamed corn, corn muffin mix, sour cream, and melted butter. The result is a rich, buttery, savory, sweet, delicious side with a firm pudding like texture and studded with whole corn kernels. I serve this casserole warm, but it delicious at room temperature as well.
