My Oven Baked Denver Omelette is a delicious and hearty breakfast. Similar to a Western Omelette, the Denver Omelette is filled with ham, peppers, onion, and cheese.
This is a perfect recipe to make in advance for weekday breakfasts, or a quick evening meal on a weekdays- who doesn't love breakfast for dinner.
After the holidays there is no shortage of leftover ham in our house, and my Oven Baked Denver Omelette is a wonderful recipe using leftover ham.
One of my favorite things to make for my family during the holidays are egg recipes that bake in the oven. I find that it is easier to serve our group, and I love having leftover to heat for breakfast.
Both of my kids are egg lovers and love this recipe. Scrambled eggs are always high on their list of favorite foods, but this is certainly in the running.
Ingredients
- Eggs- I like to use large sized egg for this recipe. If using medium eggs I recommend adding 2 eggs. If using extra large, I suggest removing an egg.
- Ham: Leftover chopped ham works great, but you can use prepared chopped ham or even chopped deli ham from the store.
- Bell Peppers- Any color bell pepper work, or a combination of colors.
- Yellow Onion- white onion is a fine substitute in my Oven Baked Denver Omelette, but red or sweet work as well.
- Green Onion- I use this as a topping, but it can be omitted.
- Milk- I use whole milk, but 2% works well too.
- Cheddar Cheese- I love medium to sharp cheddar.
- Salt- Be mindful of salt usage because of the ham. You can omit the salt as well if you prefer.
- Black Pepper- I love lots of ground black pepper with my eggs.
- Cooking Spray- Use this, butter, or olive oil to prevent sticking
- 10-inch Pie Plate or 9x9 Baking Dish- I like to use a pie plate, but a squash dish works too.
Let's Talk Ham!
Leftover ham is one of my favorite proteins to create around because the options are endless. For my Oven Baked Denver Omelette make sure to chop my ham into small pieces for this recipe, but my store sell packaged diced ham.
Can you use chopped deli meat for this recipe? Sure! The ham will have a a different texture since the slices are thin, and I think it will taste delicious.

Instructions
- Preheat oven to 375°F. Grease a 10-inch round baking dish with cooking spray.
- Place ham in the pie plate. Add peppers and onions. Gently mix with a spoon. Top with ⅓ cup of cheese.
- Beat eggs, milk, salt, and pepper in a large bowl. Pour egg mixture over the ham, onions, peppers, and cheese.
- Top with additional ⅓ cup of cheese
- Bake in oven until eggs are browned and puffy, about 25-30 minutes. Allow eggs to sit for 2-3 minutes before serving.
