Egg and Bacon Loaded Breakfast Tacos

It is National Taco Day and I am celebrating by starting the morning with my Egg and Bacon Loaded Breakfast Tacos. Warm tortillas filled with fluffy eggs, crispy bacon, fresh salsa, chopped onions, cheddar cheese, avocado, and fresh cilantro. The perfect breakfast for any taco lover!

Oh my tacos. Who doesn't love tacos? I feel like they are one of my favorite foods, and I am always excited to see them on the menu. I really love all kinds of tacos too. I feel like the dragon in the children's book "Dragons Love Tacos" because there is a part where they list the long listing of the different tacos the dragons love. My oldest son loved that book so much that we had a Dragons Love Tacos birthday party for him- I even included taco cookies, a cake with the book design on it, a Dragons Love Tacos t-shirt, and event a make your own taco party game with different paper toppings for the kids to play. I still remember the funny look the bakery staff gave me when I came in with the book to show them. It as probably one of my all-time favorite parties.

These tacos are all sorts of amazing! It starts with fluffy eggs and bacon, and then loaded with all the essential toppings: salsa, cheese, onion, avocado, and fresh cilantro. This recipe is so quick to pt together, and is one of my favorite breakfasts.

You can even leave the bacon out of the eggs if you prefer that to the eggs and bacon. Personally, I love the bacon in this recipe, but I know that is not for everyone, and something that can be an easy adaption so everyone can enjoy the tacos. You could also add roasted or sauteed veggies to your tacos as well for a little extra bulk to your meal.

I often am asked about my eggs because they are really tasty, and I have worked hard to learn to keep them nice and fluffy. The trick I can tell you is to use a little more milk than you think you need, and cook them slow and low. If the heat is too high you miss out of the fluffy quality of the eggs.

Egg and Bacon Loaded Breakfast Tacos

Ingredients
 
 

  • 6 tortilla shells
  • 6 strips of bacon, chopped
  • 6 large eggs
  • ½ cup whole milk
  • ¼ teaspoon salt
  • ½ tsp black pepper
  • ½ cup shredded cheddar cheese
  • 2 tablespoon diced white onion
  • ½ cup salsa of choice
  • 1 avocado, halved and sliced
  • 3 tablespoon fresh cilantro, chopped

Instructions
 

  • Warm tortillas in the microwave for about 15 seconds. Remove, cover, and set aside.
  • In a medium bowl, whisk together eggs, milk, salt , and pepper. Set aside.
  • In a large rimmed skillet, cook the bacon till crisp. Reduce heat to medium-low. Drain all but 1 tablespoon of the bacon grease from the pan. Add the eggs to the bacon and allow eggs to cook, but gradually pull in the sides and allow the eggs to set.
  • Once eggs are cooked, place ⅙ of eggs into a tortilla. Top with ⅙ of the following: cheese, onion, salsa, avocado, and cilantro. Serve and enjoy warm.

      It is so cute. They can't have spicy salsa or it is bad news....of course they tack some down. There is a second one as well and it is adorable.

    My 12 year old is a big fan of breakfast tacos and I'm sure he'll LOVE these. What a hearty and perfect way to start any day - eggs, avocado and tortilla - yummy!!

    This tacos loaded with eggs and bacon are such a great idea for a nice breakfast and frankly for me breakfast is the most important meal of the day - this is such a perfect idea to start my day- nutritious and so filling. Great idea.

    I seriously love a good breakfast taco! While I crave all things sweet when I get up early in the morning, if it's the weekend and brunch is involved, I want all things savoury! These tacos would be perfect for my Saturday morning!
