Sausage Egg and Cheese Breakfast Roll-Ups

Savory sausage, fluffy scrambled eggs, and cheese rolled-up in a flaky crescent roll and baked until golden. A delicious and easy breakfast that can be made in advance for an on-the-go breakfast!

This is the last day of #BrunchWeek and I am excited to share my Sausage Egg and Cheese Breakfast Roll-Ups! These are my kid's favorite quick and easy hot breakfast. I love it tastes great and is really filling, and my kids love the combination of the scrambled eggs, breakfast sausage, and cheese all wrapped together and baked.

This recipe is great because the parts of the recipe, like eggs and sausage, and be prepared in advance and then heated as the crescent roll bakes.

This recipe is ready in about 30 minutes, and you can cut the time even more by preparing the eggs and sausage in advance.

Sausage Egg and Cheese Breakfast Roll-Ups are a favorite because I can switch the ingredients depending on what we are in the mood to eat. Bacon or ham are great in these, and I also love to use chopped peppers and onions in the scrambled eggs.

This recipe uses a traditional pork sausage, but turkey or veggie sausage are great options as well.

WHAT DO YOU NEED TO MAKE THIS RECIPE?

  • large eggs
  • refrigerated crescent rolls
  • milk
  • sausage links
  • shredded cheddar cheese
  • baking sheet
  • frying pan

HOW DO I MAKE THIS RECIPE?

  • Heat oven to 350°F.
  • In a medium skillet cook the sausages into completely cooked in the middle. While the sausages are cooking prepare the eggs.
  • In small bowl, beat eggs with milk. Reserve 2 tablespoons beaten egg in a small dish to brush the tops of crescent rolls. Scramble the remaining eggs.
  • Unroll dough onto work surface and separate into 8 pieces.
  • Place a sausage link on the larger part of the triangle. Top with 1 tablespoon of eggs and a large pinch of cheese.
  • Loosely roll up triangles from the larger part of the triangle. Use you fingers to keep the filling in place. Place on an ungreased cookie sheet.
  • Brush reserved beaten egg on top of each crescent. Bake 16 to 18 minutes or until the tops of the crescent rolls are golden brown.
