Cheesy Ham Broccoli and Rice Casserole is a quick and easy casserole that is made with leftover ham and pantry staples! Creamy, hearty, and cheesy make this ham and broccoli packed casserole a family favorite.
I get super excited for any holiday that we celebrate and bake a traditional ham for a meal. I love the ham on the day it is cooked, but what I love more are the leftovers. Leftover ham makes some of my favorite meals, and I am excited to share one of my favorites: Cheesy Ham Broccoli and Rice Casserole.
This casserole has it all. Creamy, cheesy, smokey, hearty, and filled with delicious ham and broccoli. I top this casserole with a crushed cracker topping and it is so delicious!
My kiddos love this, and that is always a win. My oldest is a great eater, but my youngest is in a picky stage, but even he loves this meal. My favorite this about this casserole is the addition of the fresh broccoli because the cheesy broccoli with rice is so rich and tasty. This casserole is a breeze to put together as well because the ham is already cooked, and the rice is not pre-cooked before the casserole bakes- so simple and so easy!
What do you need to make Cheesy Ham Broccoli and Rice Casserole?
- diced ham
- fresh broccoli florets
- cream of chicken soup
- sour cream
- black pepper
- onion powder
- long grain rice
- chicken broth
- grated cheddar cheese
- round butter crackers
- melted butter
How do you make Cheesy Ham Broccoli and Rice Casserole?
- Pre-heat oven to 350°F. Lightly grease a 9x13 casserole dish with cooking spray.
- Layer diced ham in the casserole dish. Next, add the broccoli on top of the ham.
- In a medium bowl, mix together the soup, sour cream, pepper, onion powder, and rice. Add the broth and stir. Add 1 cup of cheese and stir.
- Pour liquid over the ham and broccoli. Cover with foil and bake for 65 minutes. While the casserole bakes, prepare the cracker topping. Place crackers, into a sealable bag. Seal and crush the crackers. Add melted butter, seal, and mix with hands. Set aside.
- After 65 minutes, remove foil and add remaining cheese to the top of the casserole and following with crushed buttered crackers. Bake uncovered for an additional 20 minutes. Remove from oven and allow and allow casserole to rest for about 5 minutes before serving.
These days we have all have been staying home more, and recipes that can re-purpose leftovers are excellent to have saved because they stretch out meals, and are a great way to use all your leftovers! I don't know about your family, but sometimes getting mine to eat leftovers can be a struggle, but cooking with leftovers is a great option. Like I said, I love to use ham, but I love having leftover turkey and chicken as well.

Can I use instant rice?

You can, but you will want to compare the water ratio. Typically, instant rice is a 1:1 ration and regular rice is a double water to rice. This recipe uses liquid to accommodate regular rice. You will want to reduce the amount of liquid and it will need less cooking time.
