Italian Sausage Bell Pepper and Garlic Scape Risotto

Italian Sausage, Bell Pepper and Garlic Scape Risotto is a rich and hearty recipe using lot of garden veggies! Mild Italian sausage, fresh bell peppers, zesty garlic scapes, and Parmesan cheese make an unforgettable flavor combination, and a weeknight friendly risotto recipe!

Ooooooo Risotto...... how I adore you. 

I have a hard time not ordering risotto when I see it on a menu, and I love trying different flavor combinations. Right now garlic scapes are popping up in the farmer's market, and I couldn't want to wait to try them in a risotto.  

Normally, I like to make my Garlic Scape Pesto, but I wanted to try something new (I of course made pesto too).

Italian sausage and bell peppers would make a great trio with garlic scapes, and my Italian Sausage, Bell Pepper and Garlic Scape Risotto is a delicious combination.

The flavors of this risotto are delicious and I loved the sweet peppers and the bit of sharpness from the scapes- plus how can you go wrong with Italian sausage! I know that risotto can seem like and intimidating thing to make, but I promise you that it is not that hard. It is so versatile and makes a great side or, in this case, a main meal.

WHAT DO YOU NEED TO MAKE THIS RECIPE?

  •  mild Italian sausage
  • orange bell pepper 
  • red bell pepper 
  • shallot 
  • garlic scapes
  • Arborio rice
  • dry white wine
  • chicken stock
  • Parmesan cheese
  • risotto ingredients prepped
  • risotto ingredients prepped

HOW DO YOU MAKE THIS RECIPE?

Place stock in a medium saucepan. Bring to a simmer (do not boil). Keep warm over low-medium heat.


Brown sausage in a large rimmed skillet over medium heat. Once browned, drain excess grease if needed. Add shallots and peppers. Cook 1-2 minutes.


Stir in rice, and cook for 1-2 minutes, stirring constantly. Add wine and cook about 2 minutes or until liquid is nearly absorbed, stirring constantly.

Continue by adding stock, ½ cup at a time, stirring constantly until each portion of stock is absorbed before adding the next. Add the garlic scapes with the last portion of stock. Remove risotto from heat and stir in the cheese.

RISOTTO FREQUENTLY ASKED QUESTIONS!

Risotto needs a little love as you make it, and some people will say that is is not a weeknight dish. I typically disagree because it cooks in one pan and is typically ready in 30-minutes. 

Where can I find Arborio rice?

It is typically located by the other rice at the grocery store, but sometimes I find it in the natural foods section.

I don’t drink- what can I use in place of wine?

The wine can be subbed for extra chicken stock.

Can I use coconut oil in place of the olive oil and butter?

Yes! The flavor might be a little nuttier, but it will be delicious

My risotto is not absorbing the liquid- what do I do?

Your heat is likely not height enough. Turn it up slightly till you see a different.

Can I make risotto in advance?

I typically say no because the liquid gets absorbed, and it gets a bit thick for my liking.

Can I make Italian Sausage, Bell Pepper and Garlic Scape Risotto without sausage?

Of course! This easy risotto recipe can be made meat free. Use vegetable broth or stock to make the dish vegetarian. Mushrooms are a great substitute for the Italian sausage.

LET'S TALK GARLIC SCAPES!

Garlic scapes are the tender stem and flower neck of hardneck garlic plants. They are pungent and zesty, but an absolute treat to eat each year.

Here are a few of my favorite ways to use garlic scapes:

  • Grilled Garlic Scapes- coat in a little oil and seasoning and grill.
  • Stir-Fry with protein and veggies
  • Chopped and added to eggs, risotto (like my Italian Sausage, Bell Pepper and Garlic Scape Risotto), salads, or even pizza
  • Pickled garlic scapes
  • Garlic scape hummus or garlic scape pesto
  • Compound butter makes with salt, pepper, and chopped garlic scapes

  • 1 lb mild Italian sausage
  • 1 orange bell pepper sliced
  • 1 red bell pepper sliced
