Slow Cooker Brown Sugar Carrots

My Slow Cooker Brown Sugar Carrots are a perfect side dish for a holiday or weeknight meal. Carrots slow cooked in a spiced buttery brown sugar sauce. A delicious sweet and savory combination.

I love cooked carrots. One of my favorite ways to eat them is with a little honey, butter, and fresh herbs.

However, I created a new recipe, my Slow Cooker Brown Sugar Carrots, and it absolutely is a the top of my favorite side dishes.

What makes this recipe delicious is the combination of the brown sugar and butter slow cooked with the carrots. I like to add a little chili powder, salt, pepper, and cinnamon to create the ultimate sweet and savory carrot recipe.

The trick to a nice thick glaze is adding a little cornstarch at the end to thicken the sauce.

These carrots are perfect for an Easter side or for a quick weeknight side dish.

Ingredients

  • baby carrots - large carrots can be used, but cut them into 2 inch pieces.
  • butter - salted or unsalted work fine
  • brown sugar- I recommend light brown sugar
  • black pepper
  • salt
  • chili powder
  • ground cinnamon
  • cornstarch
  • 3-4 quart slow cooker

Instructions

  1. Place carrots into a 3-4 quart slow cooker. If you use a larger size there will be a shorter cooking time.
  2. Top with butter, sugar, salt, pepper, chili powder, and cinnamon.
  3. Place cover on the slow cooker and cook on low for 4 hours.
  4. During the last 30 minutes stir in the cornstarch. Put cover back on and cook and additional 30 minutes.
  5. Serve or store in a covered container.

Ingredients
  

  • 16 oz bagged baby carrots
  • 4 tablespoon butter
  • 3 tablespoon brown sugar
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ¼ teaspoon chili powder
  • ¼ tsp ground cinnamon
  • ½ tablespoon cornstarch
