Fresh strawberries sandwiched between a buttery oat crust and crumble are a delicious way to celebrate strawberries. A simple recipe that is rich, sweet, delicious, and seasonal.

Strawberry season is here, and what better way to celebrate #BerryWeek than a traditional and simple Strawberry Crumb Bar!

I look forward to strawberry picking each year with my kids because it is always a lot of fun. The boys really get into it, and I think they always eat more than they pick. I typically end up paying for extra to account for the eaten berries.

These Strawberry Crumb Bars are one of my favorite things to make with fresh strawberries. The bottom crust, and crumbled topping are make from the same batch and it is so yummy.

The bottom and crumble portion is so buttery and chewy. I use a lot of melted butter for this portion of the recipe but, trust me, it is soooo worth it. The buttery crumble with the sweet fresh berries is a perfect match.

These bar do take time to set up and need fridge time. It really helps them set and cool properly- plan accordingly! I promise you that it will be well worth it!

Follow the steps of this recipe and you will have a new favorite strawberry crumb bar that will make you count down the days till strawberry season!

What Do You Need to Make Strawberry Crumb Bars?

  • unsalted butter 
  • brown sugar
  • all-purpose flour
  • old fashioned rolled oats
  • baking soda
  • salt
  • vanilla
  • fresh strawberries
  • cornstarch
  • white sugar
  • mixing bowls
  • 9x13 baking dish

How to Make Strawberry Crumb Bars

This recipe is so easy to adapt and not change the preparation method. It is easy to substitute blueberries, blackberries, or raspberries on a 1:1 ratio in this recipe.

  1. Preheat the oven to 350°F.
  2. In a medium bowl, mix brown sugar, flour, oats, soda, salt, and vanilla.  Add melted butter and stir until combined.  Press half the oat mixture into the pan and bake for 10 minutes.
  3. While the crust bakes prepare the strawberry filling. Mix together strawberries, cornstarch and sugar.
  4. Remove bar crust from oven. Place strawberry filling over the base. Crumble the remaining topping over the strawberry filling. Return the bars to the oven.
  5. Bake for 25 minutes. Cool on the counter for about 45 minutes. Cover and chill in the fridge for at least 4 hours before cutting and serving.

Tips and Tricks

  • Use the butter. I know it seems like a lot, but you will thank me because your result will be delicious.
  • Subbing other berries is fine on a 1:1 ratio.
  • You can use quick cook old fashion oats in this recipe. Sub on a 1:1 ration and the topping will not have the larger oats, but will still be delicious.
  • Do not skip the cornstarch because it will help the strawberry filling thicken.
  • Do not skip on the counter cooling time or the fridge time. This allows the bars to set up so the warm berries with the butter result in bars that are hard to eat.
  • Add a few white chocolate chips to the strawberries for a berries and cream style bar.
  • Lining the pan is not needed. There is enough butter in the crust to prevent sticking.
  • Store in a covered container once the bars have been cut.

Strawberry Picking Tips

  • Look for red, plump, and firm berries.
  • Avoid white tips- they will taste yummy, but not ready yet.
  • Pay for what you eat while picking- this is a norm for us with the kids.
  • Try not to pack strawberries into a container because it will cause them to bruise.
  • Have fun!

Ingredients
