Strawberry Rhubarb Margaritas

In Wisconsin, strawberries are in season and there is nothing better than fresh strawberries from a local farm or roadside stand. Rhubarb is also still going strong, and I felt is was a perfect combination to turn into a margarita. We love making margaritas and have dappled in a few different flavors at home (Here is the recipe I use for the mix), but this combination is my favorite. I love the sweet strawberries with the tart rhubarb flavor combination. The additional tartness from the limes and sharp tequila makes a perfect drink. The strawberry rhubarb syrup is perfect to make non-alcoholic version with a little white soda or limeade for the kiddos. As you can see the syrup requires you to strain, and I love to reserve the unused strawberries and rhubarb to make baked goods (think in place of applesauce).

Ingredients
 
 

  • 2 oz silver tequila
  • 2 ½ Tbl Strawberry Rhubarb Syrup, recipe below
  • 2 oz Margarita mix
  • Ice
  • Lime Wedges and Strawberries, for garnish

Instructions
 

  • Fill and 8 oz glass ½ - ⅔ full with ice. Add tequila and syrup. Top with margarita mix. Stir and garnish with a lime wedge and strawberry.

Notes

Strawberry Rhubarb Syrup
1 lb strawberries, quartered
1 ½ cup chopped rhubarb
⅔ cup sugar
1 cup water
1 teaspoon lemon zest
Place all ingredients in a small pot. Simmer for 15 minutes. Remove from heat. Strain using a fine mesh strainer and a spatula. Use the spatula to push the liquid from the fruit. Cool and pour into a jar.
Store in fridge up to 1-2 weeks.
**Pulp from the fruit can be saved to use in baking recipes!**
