Strawberry Rhubarb Bread is rich, sweet, and tangy. This one-bowl quick bread recipe is an excellent way to use seasonal strawberries and rhubarb.
Summer is here when the rhubarb is ready!
The kids actually finished their last day of school yesterday and we celebrated with a pizza and cake party at home. I am really happy summer is here, and there can be a bit more relaxation at home.
I love this time of year when the strawberries and rhubarb are ready for picking because it means that it is time for my Strawberry Rhubarb Bread.
This bread is so moist and busting with tart creamy rhubarb and fresh sweet strawberries. It is one of my favorite breads to make, and my kids are always so excited to eat it.
This bread is really easy and it has a lovely and delicious soft sticky top that is one of my favorite qualities in a quick bread.
What Do You Need To Make Strawberry Rhubarb Bread?
- brown sugar packed
- canola or vegetable oil
- egg
- vanilla extract
- white rum
- all-purpose flour
- salt
- baking soda
- sour cream
- fresh rhubarb
- fresh strawberries
- mixing bowls
- whisk
- bread pan
Cook's Notes
I have used dark and light brown sugars in this recipe. I prefer light with the flavors of the berry, but the brown provides an even richer sugar flavor.
The rum is a yummy touch in the bread and very lightly flavors it. It is optional and you can't omit without a replacement.
This recipe will also work great using ½ whole wheat flour and ½ all-purpose flour.
I also recommend baking quick breads in parchment paper for easy removal. However, cooking spray works fine as well.
How Do You Make Strawberry Rhubarb Bread?
- Line a 9x5-inch loaf pan with parchment paper or grease with cooking spray. Pre-heat oven to 350°F.
- Beat together the brown sugar, vegetable oil, egg, vanilla, sour cream, and rum. Combine the flour, salt and baking soda in a bowl. Add dry ingredients to wet mixture and mix. Gently fold the in strawberries and rhubarb. The batter will be thick.
- Bake for about 50-55 minutes.
Add A Fun Twist To Your Bread!
Subbing blueberries or raspberries is a great option for this bread.
Add a little ground ginger or ground cinnamon for a little more depth in the flavor of the bread
Add a crumb topping right before baking. You will not have the soft top, but a buttery crumble is delicious on this bread.
Add some toasted walnuts or pecans for a little toasted crunch.

I see the white rum is optional. Thank goodness for that. I love this recipe and will try it soon. Strawberry and rhubarb go together so well, and feels just like summer. Great to bake a double batch and have a loaf on hand for when it gets really warm out, too. Thanks for a great recipe!
