Inspired by a chicken caesar salad my recipe uses- chicken, caesar dressing, broth, Parmesan and fresh lemon are cooked in a slow cooker and shredded. Served on a bun with crisp chopped romaine, and more Parmesan make a quick and easy weeknight chicken dinner.

My Slow Cooker Chicken Caesar Sandwiches combine the best of both worlds into a flavor packed, weeknight friendly, easy clean-up dinner.
The chicken is cooked slow and low in the caesar dressing, and then shredded to allow the chicken to soak up all the juices and flavors. This is one of my favorite ways to prepare shredded chicken in the slow cooker.
The flavors of the chicken caesar salad are transformed into a juicy and flavorful sandwich. Savory, tangy, salty- served with a fresh crunch from the romaine lettuce.
My family loves this recipe, and the leftover shredded chicken is fantastic for sandwiches for a quick lunch.
Ingredients
- boneless skinless chicken breasts
- chicken broth
- Caesar dressing
- shredded Parmesan cheese
- salt
- ground black pepper
- fresh lemon
- Shredded lettuce, additional Parmesan cheese, and buns
- Slow cooker
Instructions
- Add the chicken breasts, chicken broth, parsley, and pepper to the slow cooker.
- Cook on low for 6 hours. Remove from the slow cooker, shred the chicken and return to the slow cooker.
- Add the cheese. Cook for an additional 30 minutes. Serve on buns with chopped Romaine lettuce and Parmesan cheese.
