Cold weather brings hearty chilis and stews, like Beef Chorizo and Bean Chili. Packed with beef and chorizo with lots of beans and veggies. Perfectly seasoned and a delicious warming meal everyone will love.
One of my favorite things about cold weather seasons are warm soups and stews. In our house, we are big chili lovers. My favorite recipe for a traditional chili is my Best Meaty Chili. The chili has won multiple awards and is always a crowd pleaser.
For many years, there was not a written recipe for the chili and I finally measured and wrote it out when I entered my chili cook-off at work. The chili won and I was naturally very excited.
My family loves tacos and I decided to create a taco inspired chili from my original recipe. I opted to use a mixture of two different meats- ground beef and chorizo. The chili is flavored with taco seasoning, chili, and cumin. I used a few different types of beans over just using chili beans. I also not only used jalapenos in my chili, but a mild diced green chilies. The chorizo gives the chili a delicious savory spice, but not too spicy, and compliments the taco flavor.
This chili is a hard one to beat- the taco flavor is subtle, but give just enough of a different flavor to stand out. I like to garnish mine with sour cream, cheese, and a few corn chips, but cheese, jalapenos, black olives, or guacamole would be delicious.
This chili is also a chili cook off winner as well!
Ingredients
- ground beef
- ground chorizo
- medium onion
- green bell pepper
- taco packet
- ranch packet
- chili powder
- ground cumin
- garlic powder
- chili seasoned black beans
- canned chili beans
- chili seasoned kidney beans
- canned chopped jalapeños
- diced green chilies
- diced tomatoes
- petite diced tomatoes
- tomato sauce
- soup pot
Instructions
- In a large pot, brown beef and chorizo till no longer pink. Drain excess grease. Add onion and pepper and cook about 5 minutes.
- Now, add taco packet, ranch packet, chili powder, cumin, garlic powder, and stir.
- Next, add the beans, jalapenos, chilies, and stir. Stir in the tomatoes and tomato sauce.
- Simmer on low (stirring every so often) 2 ½ hours. Serve with sour cream and corn chips (or any other favorite toppings).
Subtitutions
- Ground turkey is a great replacement for the beef. There are also turkey chorizos that can be used as well.
- If you worry about spice, omit the jalapenos and use a diced poblano or extra canned mild green chilies.
- I like a variety of beans in this chili, but you can use one type versus 3, or add an additional can if you like even more beans.
