Hearty Sausage and Orzo Soup is a delicious weeknight dinner that is ready in under 30 minutes. Filled with savory sausage, tomatoes, tender orzo, and topped with parmesan cheese. Use your pantry staples to make this delicious soup!

Weeknight meals can be a sprint in our house. Some nights extra time to cook is an option and some night I need dinner FAST.

My Sausage and Orzo Soup is hearty and perfect for a quick and easy dinner recipe. This soup cooks is 30 minutes.

The ingredients are simple- sausage, onion, garlic, tomatoes, and orzo. So simple, and so delicious. The soup is nice and thick, and a favorite as the weather gets cooler. One of my favorite things about this soup is that it gets thicker overnight and the flavors get stronger which makes it great for leftover the following day- if you have leftovers!

Sausage and Orzo Soup is a great way to use pantry ingredients as well. I typically keep a few packs of sausage in my freezer, and it is easy to make this soup for a quick meal.

Ingredients

  •  mild Italian sausage
  • small onion
  • garlic
  • dried basil
  • salt
  • ground black pepper
  • petite diced tomatoes
  • tomato sauce
  • water
  • uncooked orzo pasta
  • Parmesan cheese, for topping
  • soup pot

More About Orzo!

Orzo is a delicious rice shaped pasta. It is easy to cook, affordable, and a must-have pantry staple.

There is a lot of flexibility around orzo recipes and cooking technique. It can be simmered in a soup, boiled in broth, toasted in a pan. It also cooks really fast which makes it a delicious side or main meal.

Orzo can overcook quickly so it is important to keep an eye on it while cooking so it is not mushy.

Instructions

  1. Cook sausage and onion in a soup pot until sausage is crumbled and onion tender. Add garlic and cook an additional minute.
  2. Add the basil, salt, and pepper.
  3. Next, add the diced tomatoes, tomato sauce, and water. Stir to combine.
  4. Simmer for 5 minutes and add the orzo.
  5. Continue simmering for about 10 minutes, or until orzo is tender.
  6. Serve in bowls and top with parmesan cheese.

  • 1 lb mild Italian sausage
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 tsp salt
  • ½ tsp ground black pepper
  • 14.5 oz petite diced tomatoes
  • 8 oz tomato sauce
  • 1 ¼ cups water
  • ½ cup uncooked orzo pasta
  • Parmesan cheese, for topping
