Slow Cooker Verde Chicken Chili is a simple slowcooker recipe combining shredded chicken, seasoning, salsa verde, beans, and lots of yummy toppings. Filled with pantry staples and freezer friendly make a delicious and hearty meal.
Slow cookers are fantastic at any time during the year. Slow cooked meals packed with flavor, and easy to save some time in the evening. I love pretty much any form of white chicken chili and this one might just be my favorite.
I have a Weeknight White Chicken Chili recipe that is super quick, easy, and stove top friendly making is one of my favorites, but I am super into this slow cooker version I am sharing today.
There are a few differences that make a difference. I use shredded chicken in this recipe and I added a ranch seasoning back in addition to a jar of salsa verde. This has so much flavor and it is so good- I also kept the beer in this chili along with my Weeknight Chicken Chili recipe. I also top with with a bit of cooked rice, cheese, tomatoes, sour cream, tortilla chips, and fresh cilantro. The chili is thick and hearty and one of my new favorite dinners.

How do I make Slow Cooker Verde Chicken Chili?
Place chicken, broth, and water into the slow cooker. Set to low and cook for 6 hours or high for 4 hours.
When chicken has cooked remove it from the slow cooker, shred it, and return the chicken to the slow cooker.
Add the onion, chilis, salsa, bean, beer, and seasoning. Cover and cook on low for 2- 2 ½ hours.
Serve in bowls, over rice, and top with cheese, tomatoes, sour cream, tortilla chips, and cilantro.

Can I use pre-cooked rotisserie style chicken or plain shredded chicken prepped earlier?

Is this spicy due to the salsa verde and chili?
No, this is a very mild soup. If you want more heat you can add a diced jalapeno when you add the onion to the soup.
Can I shred the chicken right in the slow cooker?
Yes, sometimes I use my hand mixer for a super quick shred and keep the chicken in the slow cooker.
Can I use a different type of beans?
Yes, any bean will work. I like great northern, but a navy bean, black bean, or pinto bean will be delicious as well.
Can I omit the beer?
Yes, just add a little extra chicken broth in place of the beer.

- 1 ½ lbs Boneless Skinless Chicken Breasts or Thighs
- 6 cups Chicken Broth
- 1 cups Water
- 1 small onion, diced
- 4 oz can Diced Green Chilis
- 47.4 oz Great Northern Beans, rinsed (3 cans)
- 16 oz Salsa Verde
- 12 oz Lite Beer
- 1 tablespoon Chili Powder
- ½ tablespoon Ground Cumin
- 1 oz Ranch Seasoning Packet
- 1 teaspoon Salt
- ½ teaspoon Pepper
- Rice, Tortilla Chips, Sour Cream, Cheese, and Tomatoes, for topping Optional
