Weeknight White Chicken Chili

Soup is always what is on the menu when it gets cold. October weather in Wisconsin is wind, chilly, and drizzly. OR, not so often, it is sunny, mid-fifties, and there is a light breeze. Unfortunately, the first option has been our normal this fall, and recipes like Weeknight White Chicken Chili are my weeknight staples.  
 
This recipe is everything I love in a recipe. Quick, filling, and kid approved. This recipe is ready in under 30 minutes, and makes fantastic lunch leftovers.

I use a few short cuts to make this a weeknight friendly recipe. I use cooked chicken in this recipe. My favorites are to use a rotisserie chicken or I use precooked shredded chicken I thawed from my freezer. I think the rotisserie chicken is my favorite, and I average about 3 cups of cooked chopped chicken, but that will vary a but depending on the size of the chicken. If you have a little more that is no problem, and results in a heartier soup. 
 
I also use canned beans over soaking uncooked beans to save even more time. You can use soaked beans, but that mean planning ahead and that is not always my strong suit on a weeknight..... 
 
This soup is nice and mild, and my kiddos love it. They especially love loading it with all the yummy toppings. Our favorite toppings are cilantro, shredded cheese, sliced olives, and sour cream. I like to put a tortilla in my bowl, scoop in the soup, and top it with my favorites. I love when the toppings thicken the soup and it becomes rich, creamy, and even more delicious. My husband loves to top his with a few crunchy corn chips, but I love my tortilla bowl.

Halloween is creeping in, and we celebrated last night with a small Halloween party. Kellen request a party for him and Rowan, and he had a few friends over for a small party. I made mummy dogs and created a zombie style mac and cheese. We also enjoy a few zombie cookies. I had a few games for the kids: pin the head on the skeleton, a ghoul bucket ball drop, and a sticky spider target game. The kids got prizes, and their fill of Halloween candy. The kids also enjoyed a few rolls of black and orange streamers, and created a spooky maze that turned into a crazy knot they all kicked around and played with. So adorable. I was so happy to help make his first Halloween party a fun experience for he and Rowan's friends! 
 
Today we headed to a haunted house that was having a kids day. It was a lot of fun, and the kids loved it. Kellen and my nephew both fought over who would go first, but once we were in the house they tried to shove me in front. Too bad for the boys because I shoved them forward, and made them lead the way. I love haunted houses, and it was fun to see them squirm a bit.

Weeknight White Chicken Chili

Ingredients
 
 

  • 1 tablespoon olive oil
  • 1 medium white onion, diced
  • 1 poblano pepper, finely chopped
  • 63.2 oz canned great norther beans, drained and rinsed (4 cans)
  • 3 cups cooked and chopped chicken
  • 7 oz can mild diced green chilies
  • 8 cups low sodium chicken broth
  • ½ cup beer (I recommend a lighter beer)
  • 1 tablespoon chili powder
  • ½ tablespoon ground cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Optional Toppings: Chopped Cilantro, Sliced Olives, Soft Tortillas, Shredded Cheese, and Sour Cream

Instructions
 

  • In a soup pot, saute onions and poblano in olive oil till tender.  Add remaining ingredients. Season with additional salt and pepper if necessary. 
  • Heat soup to medium high and allow it to lightly simmer for about 15 minutes to allow the flavors to blend together. 
  • To serve, place a tortilla in the bowl, if desired, and ladle in the soup. Top with desired toppings and enjoy.

    I made the white chicken chili today and my family ate it up! My husband had seconds , which is always a happy moment for me. It was rich, it had heat, it was hearty. My tummy is still warm and fuzzy. THANK YOU!!!!!!!

    I've really been feeling puny with my cough and cold and soup sounds so good. Not any soup -- something with a kick that will break through the bug that's got a hold of me. Your soup sounds like it just might do the trick. I'll have to give it a try.

    This is so good! I even cheated and used canned chicken breast, dried minced onion and garlic from a jar! Definitely will be making it again.
