Roasted Potatoes with Lemon, Oregano and Feta are a unique and delicious side dish. Tender roasted potatoes tossed with fresh herbs, citrus, and tangy feta cheese.
I love roasted potatoes and they are a staple side dish in our house. They go with just about anything and it is easy to adapt and add different ingredients.
There is a restaurant in my city that makes the most delicious Greek fries. They use lemon, oregano, vinegar, and feta. I always order them, and was inspired to make my own roasted Greek potatoes at home.
My version of Greek potatoes uses fresh lemon juice, dried oregano, salt, pepper, olive oil, and feta cheese. The feta cheese is my favorite part and I typically serve a little extra on the side for an extra sprinkle.
My Roasted Potatoes with Lemon, Oregano and Feta are delicious served with my Grilled Lemon Pepper Chicken and Grilled Garlic Greek Chicken.
Ingredients
- russet potatoes - red potatoes are a great alternative to russet potatoes
- fresh lemon juice - I recommend using fresh lemon for the potatoes
- dried oregano - fresh chopped oregano works well too. If using fresh, use a tablespoon.
- salt
- black pepper
- olive oil
- crumbled feta cheese - this is the best part!
Instructions
- Pre-heat oven to 375°F.
- Lightly spray a baking sheet with cooking spray and set aside.
- Place potatoes into a large bowl. Toss with lemon juice, oregano, salt, pepper and olive oil until evenly coated.
- Arrange potatoes on the baking sheet and place in the oven. Roast for 40-50 minutes flipping the potatoes after 20 minutes.
- Remove potatoes from oven and transfer to a serving dish. Top with feta and enjoy.
Tips and Tricks
- Make sure that the potatoes are cut evenly for even cooking
- Use a large sheet pan with sides. You do not want to crowd the potatoes because they will not get as crispy.
- Add the feta while the potatoes are warm- it slightly melts and is delicious
