The weather is nice and our grill is ready to go! Truth be told, we grill year-round (yes, even during snowy Wisconsin winters), but spring and summer is really the time my grill gets the most work-out. I love to use Mazola® Corn Oil for my grill marinades!
Mazola Corn Oil is an all-purpose, cholesterol free cooking oil that is smart heart-heathy choice for your family. Variety of uses include baking, grilling, sautéing, stir frying, or mixing up a marinade or dressing.
I also love that Mazola Corn Oil has a high smoke point (450˚ F), great for grilling and stir frying at high temperatures- locking in my flavors and not promoting scorching on my food! A little char is important for a delicious grill flavor, but not to overpower what you are cooking.
One of my favorite recipes to use Mazola Corn Oil in a marinade is my Grilled Garlic Greek Chicken.
The marinate is packed with big flavors from garlic, red wine vinegar, honey, oregano, salt, pepper, fresh lemon juice, and a little Greek yogurt. The Greek yogurt is key because it, when paired with the Mazola Corn Oil, locks in the flavors from the marinate resulting the juicy and flavorful grilled chicken breasts.
I love to serve this chicken with a side of warmed pitas, red onion, kalmata olives, diced tomatoes, Greek yogurt, feta cheese, and a bit of fresh oregano. These extras are delicious on top of the chicken, but my favorite way to eat this meal to put all the fixings on the pitas and add sliced chicken before digging in!
What do you need to make Grilled Garlic Greek Chicken?
- Mazola Corn Oil
- Red Wine Vinegar
- Honey
- Garlic
- Lemon Juice
- Greek Yogurt
- Salt
- Pepper
- Dried Oregano
- Boneless Skinless Chicken Breast Halves
- Pitas
- Red Onion
- Kalmata Olives
- Fresh Oregano (dried works too)
- Tomatoes
- Feta Cheese
How do you make Grilled Garlic Greek Chicken?
- In a medium bowl, whisk together the Mazola Corn Oil, red wine vinegar, honey, garlic, salt, pepper, lemon juice, yogurt, and oregano.
- Place chicken in a gallon size sealable bag. Add marinade, seal and gently toss to coat. Refrigerate for 4-6 hours. Note: It is fine to marinate long if needed.
- Preheat the grill for medium-high heat.
- Grill chicken for 5-6 minutes per side, or until the chicken's internal temperature reaches 165° Fahrenheit (75° Celsius).
- Remove from grill. Tent with foil and rest for 2-3 minutes.
- To serve, slice thing and plate with pitas, red onion, olives, oregano, tomatoes, Greek yogurt, and feta cheese

Ingredients
- ½ cup Mazola Corn Oil
- 2 tablespoon Red Wine Vinegar
- 1 ½ tablespoon Honey
- 4 cloves Garlic, minced
- ¼ cup Lemon Juice
- ⅓ cup Greek Yogurt
- 1 ½ teaspoon Salt
- 1 teaspoon Pepper
- ½ tablespoon Dried Oregano
- 4 Boneless Skinless Chicken Breast Halves
- 4 Pitas
- ½ medium Red Onion, sliced
- 12 Kalmata Olives
- Fresh Oregano dried works too
- ½ cup Tomatoes, chopped
- Feta Cheese

Love Greek food and flavours. There's something about Greek oregano which makes everything taste delicious. I don't think I've ever cooked with corn oil, so I'll have to look out for it.
