My Grilled Lemon Pepper Chicken is the perfect summer grilling recipe. Tender, juicy, and packed with citrus flavor makes the most delicious chicken.
The secret to the most tender, juicy, and moist chicken breasts is a simple seasoned mayo coating before grilling. For this recipe, I season the mayo with lots of lemon zest and black pepper before finishing the chicken on the grill.
I love to serve my Grilled Lemon Pepper Chicken with grilled veggies or my favorite Roasted Potatoes with Lemon, Oregano and Feta .
Ingredients
- boneless skinless chicken breasts - chicken thighs works great for this recipe as well!
- mayonnaise - mayo seals in the moisture to make Grilled Lemon Pepper Chicken!
- lemon zest
- lemon juice
- salt
- black pepper
- garlic powder
- onion powder
- dried parsley
- mixing bowls
- grilling tongs
- meat thermometer - A meat thermometer is one of the best things to buy for the juiciest grilled meat. I love Thermoworks TermoPop. It is so simple to use and the colors are beautiful. I love to give these as gifts during the holidays!
Substitutions
- Boneless skinless chicken thighs work great in place of breasts. Chicken legs works great too, but you will need to adjust the cooking time.
- Full-fat sour cream or Greek yogurt work well in place of mayo, but mayo has the best results.
- For a little heat, add some cayenne pepper or hot sauce to the mayo mixture.
Instructions
- In a large bowl, whisk together mayo, zest, juice, salt, pepper, onion powder, parsley, and garlic powder.
- Add chicken to the bowl. Toss to evenly coat in the mayo mixture. Allow chicken to rest in the fridge for 40 minutes.
- After chicken has rested in the fridge prepare the grill. Heat grill to medium heat.
- Grill chicken for 5-6 minutes per side, or until the chicken's internal temperature reaches 165° Fahrenheit (75° Celsius).
- Remove from grill. Tent with foil and rest for 2-3 minutes. Serve.
Why Use Mayo For Grilling?
When grilling chicken, like my recipe for Grilled Lemon Pepper Chicken, mayo is a key ingredient.
May helps evenly distribute the seasonings and keep the meat moist. With the moisture and seasoning locked in due to the additional fat in the mayo results in the most tender, juicy, and delicious chicken EVER. Marinating chicken with mayo is my favorite grilling trick!
Chicken isn't the only protein that benefits from a brush of mayo. Pork, beef, and fish stay moist and won't stick while grilling.
