Pumpkin is a fall favorite and it is teamed with another favorite- chili. Pumpkin Chili has lean ground beef, beans, tomatoes, seasoning, and pumpkin makes hearty meal packed with fall flavors.
There is nothing I love more than a big bowl of chili with all the fixings on a fall evening. Chili is a staple at out house, and one of my favorite meals.
This chili is unique because the signature ingredient is pumpkin puree. The chili uses with lean ground beef (you can use ground turkey), tomato sauce, tomatoes, seasoning, beans, and pumpkin.
I frequently am asked if the pumpkin flavor is strong, and the answer is no. This is a very mild, but flavorful chili. I keep the spice level low, but it is easy to add a diced jalapeno or a little extra chili powder for more heat.
Why Pumpkin?
Because it is delicious of course! Pumpkin is also rich in Vitamin A, and is high in antioxidants.
High levels of vitamins further help support your immune system.
Pumpkin also has Lutein and Zeaxanthin which can help your eyesight.
Pumpkin is also rich in fiber which slows digestions and keeps your fuller longer.
Ingredients
- lean ground beef
- onion, diced
- red bell pepper
- chili powder
- ground cumin
- pumpkin pie spice
- salt
- canned chili seasoned kidney beans
- canned pumpkin puree
- petite diced tomatoes, drained
- tomato sauce
- water
- Cheese, Sour Cream, and Crackers for Garnish
Substitutions
You can use ground turkey or chicken in place of beef. I have also found great results using a 50/50 mix of beef and ground turkey.
You can use an unseasoned kidney bean, or a regular chili bean works great.
Any color bell pepper will work. Add a jalapeno for extra heat!
Instructions
- In a pot, brown ground beef till it is no longer pink. Add onion and pepper and cook till slightly tender.
- Stir in the spices to evenly coat the meat. Add kidney beans, pumpkin puree, tomatoes, tomato sauce, and water. Reduce the heat to low and allow to simmer for 20-30 minutes.
- Serve in bowls. Top with sour cream and cheese, if desired.

- ⅔ cup water
- Cheese, Sour Cream, and Crackers for Garnish
