Christmas Monster Cookies are filled with chocolate covered candies, chocolate chips, sprinkles, oats, and rice krispies. The festive colors makes them perfect for a cookie exchange!

My Christmas Monster Cookies are full of delicious ingredients like candy, chocolate chips, oatmeal and even rice krispies.
I loved the rice krispies in the cookies because they gave a great crunch to what is a pretty dense cookie. The are my favorite addition to these cookies.
I use holiday M&M's in my cookies, but these can be made anytime of year, or for any holiday, depending on the colors you choose.
One of my favorite things about Christmas Monster Cookies is the crispy buttery edges and the yummy candy filled chewy center. These cookies are always on my list for holiday baking, and they are great for a cookie exchange.
Ingredients
- Butter
- White Sugar
- Brown Sugar Packed
- Eggs
- Vanilla Extract
- All-purpose Flour
- Baking Soda
- Baking Powder
- Salt
- Rolled Oats
- Jimmie style sprinkles
- M & M'S
- semi-sweet chocolate chips
- Rice Krispies
Substitutions
I like to use a heavy ratio of brown sugar in this recipe. If you prefer more white sugar and a lighter cookie the sugar ration can be adjusted to 50/50- or even more white sugar that brown.
You can add peanut butter to this recipe if you like! I recommend adding ⅓ cup.
I use chocolate chips for my cookies, but you could add 50% chocolate and 50% peanut butter or butterscotch chips.
Instructions
- Preheat oven to 350°F. Line cookies sheets with parchment paper and set aside.
- Mix butter with sugars until fluffy using a stand mixer or hand mixer. Mix in eggs one at a time. Add vanilla and beat till smooth.
- Whisk flour, baking soda, baking powder, and salt in a mixing bowl. Add to the butter mixture and mix till combined.
- Fold in candy, chocolate, sprinkles, and oatmeal. Finally, gently mix in the rice krispies.
- For smaller cookies, use a cookie scoop to scoop balls of dough onto a greased cookie sheet. For larger cookies, divide batter into 15 sections and place on cookies sheet. Bake 15 minutes. Allow to cool a few minutes before transferring the cookies to a cooking wrack.
