My Cranberry BBQ Chicken Sandwiches are a perfect weeknight meal. Packed with BBQ and cranberry flavors this is a perfect recipe to use leftover cranberry sauce. Topped with crispy onions and cheese- this is one delicious sandwich!
My family loves my Cranberry BBQ Chicken Sandwiches!
The cranberry gives a sweet little tang, but works well with them rest of the flavors. The hot sauce adds a bit of heat, but it is very mellow when paired with the smokey and sweet bbq. The onions give a salty crunchy to the sandwich and are the perfect topper for this sandwich with a little more spice from the pepper jack.
I always find myself with extra cranberry sauce around the holiday and this is an excellent recipe to use leftover cranberry sauce. It is also great to use any crispy french fried onion you have leftover that didn't make it on to the green bean casserole!
I use a jellied sauce for this recipe, but it is easy to substitute whole berry or a homemade cranberry sauce. I have made the recipe with all three varieties and each are delicious.
Ingredients
- boneless skinless chicken breasts
- canned jellied cranberry sauce (whole berry or homemade works well too)
- BBQ sauce
- Dijon mustard
- hot sauce
- garlic powder
- black pepper
- salt
- chicken stock
- french fried crispy onion toppers
- pepper jack cheese
Cranberries
My Cranberry BBQ Chicken sandwiches are a great for a recipe using leftover cranberry sauce.
Jellied (canned) - this will be a smoother sauce, but sweeter.
Whole berry (canned) - there will be a few larger cranberry pieces in the shredded chicken, but it gives nice pops of cranberry flavor.
Homemade- there will be pieces of cranberry in the shredded chicken. Homemade sauces tend to include citrus of spices and that will flavor the chicken as well.
Instructions
- Whisk cranberry sauce, bbq, mustard, hot sauce, salt, pepper, garlic powder, and chicken stock in a medium bowl.
- Place chicken into the crockpot and pour the sauce over the chicken.
- Cook on low for 6-7 hours. Remove chicken from the crockpot and shred
- Place chicken back into the crockpot and stir to make sure it soaks in all the sauce.
- Serve on toasted buns. Top with sliced pepper jack cheese and crispy french fried onion toppers.
