Shortbread cookies are one of my favorite cookies. I love my recipe for Peppermint Shortbread, and it is my go-to for a holiday cookies exchange.
However, sometimes I do not have the time for the rolling and chilling the dough needs. That is why I love my Whipped Chocolate Chip Shortbread cookies.
These cookies are ready in 30 minutes, and they are do delicious. They are buttery, sweet, and packed with flavor. Perfect for a shortbread lover like myseld.
Ingredients
- unsalted butter
- confectioners sugar
- vanilla
- all-purpose flour
- mini semisweet chocolate chips
- salt (skip this if you use salted butter)
- baking sheets
- stand mixer

Instructions
- Pre-heat oven to 325°. Line two cookie sheets with parchment paper. Set aside.
- In the bowl of a stand mixer, whip butter and sugar and on medium-high speed until well mixed and fluffy.
- Add the salt (if not using salted butter), vanilla and flour. Beat until on medium-low speed for 2 minutes. Remove bowl from stand mixer. Add chocolate chips mix to combine.
- Roll large tablespoons into balls. Flatten gently with a the back of a spoon. Place cookies on prepared cookie sheets. Bake for 15 minutes- the cookies should not be overly brown. Let cool for 5 minutes then carefully move to a wire rack, cool and serve or store in an airtight container.
