Lemon Poppy Seed Thumb Print Cookies

Lemon Poppy Seed Thumb Print Cookies are small buttery poppy seed cookies topped with a tart lemon curd. They are simple to make and they disappear quickly!

Ingredients

  • unsalted butter
  • sugar
  • egg yolk
  • vanilla extract
  • all-purpose flour
  • salt
  • poppy seeds
  • lemon curd

Instructions

  1. Preheat your oven to 375°F, and line two baking sheets with parchment paper or baking mats.
  2. In a medium bowl, beat together the butter and sugar until light and fluffy, about 2-3 minutes with an electric mixer.
  3. Beat in egg yolk and vanilla. Next add the flour, salt and poppy seeds, mix until the dough begins to stick together and form a ball.
  4. By hand, roll the dough into 1-inch balls and arrange them on the baking sheets. Flatten each ball slightly with your thumb to leave an indentation in the center of each cookie.
  5. Bake for 10 minutes. Remove the baking sheet from oven (if the indentations look shallow push them down slightly). Fill each thumbprint with lemon curd.
  6. Bake for an additional 2 minutes. This will set the curd. Transfer to cooling racks and cool.

    Yep - I might be loving this cookie recipe a little too much! Ha! I am swooning over the fact that you used 1/2 cup of lemon juice. I hope that makes these cookies super tart, because in our home, we love that puckered lip, tarty, sourness from lots of fresh lemon juice. These look divine!

    These look absolutely perfect - sweet, yummy and festive. I love lemon and poppy seed combo. It's one of my favorite one. These going to my to try list. I bet my kiddo will love these.
