Where to begin with this year. It was such a good one but a new adventure, with many stresses as well, and we are looking forward to 2019.
This year I started into my education program and University of Wisconsin- Green Bay. I returned to school in fall of 2017, but was officially in the program this year. Spring semester of 2019 will bring me to my official student teaching, and then I will be licensed to teach in the State of Wisconsin. I am a returning student and, thankfully, that saved me lots of time because I already have a bachelors degree in the subject area I am looking to teach. I am both excited and nervous for next semester, but mainly excited. I also hit my fitness goal of 500 Pure Barre classes, and was really excited. I have been doing barre for 2 ½ years, and was excited to meet my goal and be in the 500 club.
Kellen moved into Kindergarten this year, and it was a big change. He has handled it really well, but it was a big change. He has been making friends and loves his teacher. Kellen is so independent and curious. It makes me excited for him, but his curiosity certainly takes a toll on his mommy's patience from time to time (everyday). Rowan moved to his toddler program this year and is coming out of his shell. He loves his teachers, and is enjoying learning new things. He even had a part in the holiday program this year! Ron is working hard, and still enjoying his job. He is keeping his fingers crossed for a colder winter for maximum ice fishing time!
This year we spent lots of time at our cottage in Door County and had lots of adventures. We went to Milwaukee, Chicago, New York, and can't wait to travel more in 2019. In 2018, we moved into our new home and love it. We survived renovations and are enjoying the updates and all of the space.
I feel so lucky to have the platform to share our lives with you, and appreciate all that you share with me.
However, before we pop the champagne to a new year it is time to visit my favorite posts of 2018. Enjoy my friends.
Wishing everyone a happy and healthy 2019.
January 2018- No Peek Beef Tips. This was a no brainer. This meal is one of my all time favorites.
February 2018- Instant Pot BBQ Ribs. I still am in awe that these cook in under and hour, and literally fall of the bone.
March 2018- Italian Wedding Soup Skillet. I love this type of soup and was thrilled to make a hearty skillet version. This skillet is packed with flavor, and so hearty.
April 2018- Instant Pot Lentil and Sausage Soup. Apparently 2018 is the year of the Instant Pot, but that is not a big surprise. This soup is one of my all time favorites, and reminds me of a soup I ate as a child.
May 2018- Chili Lime Chicken Fajitas. A simple marinate and a simple cooking method to make one of my favorite weeknight recipes.
June 2018- Pesto Caprese Pasta Salad. Pesto and Caprese combined make one of my all time favorite pasta salads. Perfect as the weather gets warmer.
July 2018- Tart Cherry Margaritas. Tart. Sweet. Tangy. Boozey. Refreshing.
August 2018- Weeknight Spaghetti with Meat Sauce. My recipe that my family always asks me to make. Meaty, Hearty, Savory with a splash of Red Wine. A family favorite to your table in under 40 minutes.
September 2018- Chicken Tamale Casserole. My favorite back to school recipe. So quick, so easy, and so flavorful.
October 2018- I cheated and picked two because I could not decide! Weeknight White Chicken Chili and Taco Ranch Shredded Chicken (the BEST shredded chicken ever).
