Crispy and crunchy taquitos filled with BBQ pulled pork, pineapple, red onion, cilantro, and melty pepper jack cheese are a fast favorite for any party!

[easy-image-collage id=11227]I am sharing one of my favorite game day appetizers- BBQ Pulled Pork and Pineapple Taquitos. I love this appetizer because it is handheld, served warm, and easy to prep. I love the ability to grab and go when watching the game, or at a tailgate. My BBQ Pulled Pork and Pineapple Taquitos have tender and flavorful Curly’s® pulled pork, pepper jack cheese, chopped red onion, pineapple, and a little fresh cilantro- this is a flavor combination that packs a delicious punch! I roll all the ingredients together in a tortilla and bake till crisp. I serve my taquitos with a delicious creamy BBQ ranch dipping sauce- it tastes amazing with the pineapple and BBQ pork! This is of course optional since the pork is delicious alone! One of the great things about this recipe is that the taquitos can be made in advance and baked when you are ready to eat!

What do you need to make BBQ Pulled Pork and Pineapple Taquitos?
- Curly’s® BBQ Pulled Pork
- Pineapple Tidbits
- Flour Tortillas
- Shredded Pepper Jack Cheese
- Red Onion
- Fresh Cilantro
- BBQ Sauce (optional)
- Ranch Dressing (optional)
- Baking Sheet
- Cutting Board
How do I make BBQ Pulled Pork and Pineapple Taquitos?
- Preheat oven to 400°F. Line a large baking sheet with foil and lightly spray with cooking spray. Set aside.
- Place one tortilla on your work surface (cutting board, counter, ect.), place 2 tbsps of the pork in the middle. Next add 1 teaspoon on red onion, 4-5 pineapple tidbits, 1 tablespoon of shredded cheese, and 1 teaspoon chopped cilantro over the pork. Roll the taquito and place on the prepared baking sheet, seam side down. Repeat with remaining tortillas.
- Bake for 15-17 minutes. The top and edges should be crispy and browned.
- While the taquitos bake it is time to make the sauce. To make 1 cup of dipping sauce, I use ⅔ cup Ranch and ⅓ cup BBQ. Mix together and set aside till you are ready to serve.
- Remove taquitos from the oven and serve on a plate. Drizzle with the creamy BBQ ranch or serve on the side for dipping.

This is such a great recipe for game day. Simple to make, perfect to feed a crowd and also easy on the host. That pineapple is my most favorite. A little sweet, a little salty and a little spicy!

I must admit I never tried taquitos before but it sounds really delicious. I love the flavors and all the ingredients. This is something that my family will like so I'm saving the recipe. It' super easy to make too so it's a win!
