BBQ Pulled Pork and Pineapple Taquitos

Ingredients

  • 1 ¼ cups Curly’s® BBQ Pulled Pork
  • cup Pineapple Tidbits
  • 12 6-inch Flour Tortillas
  • ¾ cup Shredded Pepper Jack Cheese
  • ¼ cup Red Onion, diced
  • ¼ cup Fresh Cilantro
  • cup BBQ Sauce optional
  • cup Ranch Dressing optional

Instructions

  • Preheat oven to 400°F. Line a large baking sheet with foil and lightly spray with cooking spray. Set aside.
  • Place one tortilla on your work surface (cutting board, counter, ect.), place 2 tbsps of the pork in the middle. Next add 1 teaspoon on red onion, 4-5 pineapple tidbits, 1 tablespoon of shredded cheese, and 1 teaspoon chopped cilantro over the pork. Roll the taquito and place on the prepared baking sheet, seam side down. Repeat with remaining tortillas.
  • Bake for 15-17 minutes. The top and edges should be crispy and browned.
  • While the taquitos bake it is time to make the sauce. To make 1 cup of dipping sauce, I use ⅔ cup Ranch and ⅓ cup BBQ. Mix together and set aside till you are ready to serve.
  • Remove taquitos from the oven and serve on a plate. Drizzle with the creamy BBQ ranch or serve on the side for dipping.
