My Brownie Muffins are one of my favorite chocolatey treats. Simple to make and ready in 30 minutes. Chewy sides, and a gooey chocolate center makes the most delicious chocolate treat.
My Brownie Muffins are one of my favorite brownie style dessert.
They are rich, chocolaty, chewy, and delicious. I love that they are cooked muffin style because the center is nice and rich, but still there are chewy edges.
These brownies are perfect for a easy sweet Valentine's treat. They are perfect with vanilla ice cream, but even better with my favorite peppermint ice cream!
These Brownie Muffins are also freezer friendly, easy to thaw, and simple to quickly warm before eating.
Ingredients
- butter melted - I typically use salted butter, but unsalted works too.
- vegetable oil - oil can be substituted for additional butter, or vice versa.
- sugar
- vanilla extract
- eggs
- all-purpose flour
- cocoa powder
- baking powder
- salt
- mini chocolate chips - I like to use mini chocolate chips in my Brownie Muffins, but regular size works too.
- cooking spray
Instructions
- Pre-heat oven to 325°F.
- In a medium bowl, whisk together flour, cocoa, baking powder, and salt. Set aside.
- In a separate bowl, mix butter, oil, egg, vanilla and sugar.
- Stir the wet ingredients into the dry ingredients. Add the chocolate chips.
- Lightly grease a 12 cup muffin tin and fill cups ¾ of the way with batter.
- Bake for 20-25 minutes. The muffins should be soft in the center, but not liquid.
