Fall is casserole season in our house, and I thought it was a perfect time to share with you some of my current favorite casserole.
I love casseroles of all types because they are easy, make great weeknight dinner, freeze well, and they make great lunch leftovers! Casseroles have moved far beyond the traditional ideas of cream of mushroom soup and rice (although there is certainly a place for that!), to varieties including pasta, cornbread, lentils, and potato filled pierogies- something for everyone!
This recipes used shredded chicken, my Taco Ranch Chicken is great in this recipe, on top of cornbread. Topped with cheese and fresh toppings makes this one of my favorites.
French Onion Chicken and Rice Casserole
This recipe uses ground chicken and the texture paired with the rice, green beans, cheese, and crispy onion topping is fabulous! My kiddos love this casserole.
Not all casseroles need meat to be hearty! This recipe uses lentils cooked with veggies and red wine and topped with creamy mashed potatoes. No one will miss the meat!
This recipe is one of the easiest recipes in my arsenal and I keep the ingredients on hand for a quick go-to recipe.
A tasty variation on the favorite taco. This recipe incorporates beans, rice, and seasoned taco meat to make a super hearty meal!
Potato Chip Topped Tuna Casserole
I adore tuna casserole, and like the traditional version, but this version is amazing. It forgoes the canned soup and has a delicious cheese sauce and a crispy salty potato chip topping.
We have a debate in our house about what is better on top of a casserole- crowns or tots. I am team tot, but Ron is team crown. Either way, both are delicious and this casserole is meaty and filled with beans, corn, cheese, and peppers.
Chicken Bacon Ranch Tater Tot Casserole
Chicken, bacon, and ranch are the ever popular trio and make a mean casserole. This casserole is really rich, but full of flavor. I love to serve it with a salad or fresh steamed green beans.
Pierogis are not traditionally thought of as a casserole component, but this one will have you believing! Pierogies are filled with potatoes and this casserole has a loaded potato flavor with tomato, bacon, cheese, and green onion topping.
Cheesy Pork Chop and Potato Casserole
This casserole feel very retro to me, and it is one of my favorites. I love everything baked together and the melding of flavors from the sear on the chops, the salt from the cheese, starchy potatoes, and crispy onions.
