Meatball Sub Casserole is a weeknight family favorite made with easy ingredients. Refrigerator biscuits, meatballs, pasta sauce, and cheese make a simple and delicious meal.

I need easy recipes during the week for dinner. It is an added bonus is the recipe uses ingredients I can keep on hand for a rainy day. Meatball Sub Casserole makes dinner easy with ingredients that can be bought in advance and prepared for a quick meal.
I love using a flaky refrigerated biscuit for this casserole. As the casserole bakes, the biscuits puff up and wrap around the meatballs. They also soak up all the yummy sauce and the cheese melts perfectly on tip.
The flavors and textures are similar to a meatball sub, and it is so delicious. I love to have this for lunch the next day. However, the biscuit can get a little sauce soaked, but I personally love the texture.
Ingredients
- refrigerator biscuits- I like to use flaky layer biscuits, but country style works well too.
- frozen meatballs- frozen meatballs are found in the freezer section. I like to use an original flavor, but Italian is delicious as well.
- marinara sauce - I like marinara sauce for Meatball Sub Casserole, but pick your favorite flavor!
- shredded mozzarella cheese
- chopped parsley - dried works as well, but use half the amount.
- 9 x 13 Baking Dish
Instructions
- Pre-heat oven to 375°F. Spray a 9×13 baking dish with cooking spray and set aside.
- Cut biscuits into 8 pieces and spread evenly into the baking dish. Pour marinara sauce over the biscuits and stir to evenly coat.
- Evenly layer meatballs over the biscuits and sauce. Sprinkle with cheese.
- Bake uncovered for 35-40 minutes or until bubbly and biscuits are cooked. Remove from oven, garnish with chopped parsley, and serve.
Baking Tips
- Make sure that the biscuits are cooked before you remove the Meatball Sub Casserole from the oven. I like to use a meat thermometer in the center to make sure the biscuits are cooked. The internal temperature should be around 200°F.
- If you are using a homemade uncooked meatball make sure that internal temperature of the meatball is 165°F.
