Pancake Bites are a favorite breakfast made into a mini muffin. Baked with maple syrup, sausage or bacon, and topped with a maple glaze.

Breakfast is my kid's favorite meal of the day. Both of my boys love pancakes with sausage and bacon.
Sometimes, pancakes are a little more effort than I want to put in. I love making my Pancake Bites in advance so I can serve them to the kiddos in the morning for an easy breakfast.
These bites are fantastic for busy morning, on the go munching, and to bring for a outing like camping or going to the cottage.
I use shortcuts like pre-made mix to help make the process even faster.
My family loves these, and the maple glaze on top is delicious!
Ingredients
Pancake Bites:
- pancake mix - I like to use a pre-made mix to save time, but homemade work great too. You could also try my friend Kylee's, from Kylee Cooks, recipe for homemade pancake mix.
- milk - I use whole milk, but skim or 2% work fine. You can also sub almond or soy milk.
- egg - one large egg. Use 2 eggs if using a medium or small egg.
- maple syrup - Get the real maple syrup. It is so much better for Pancake Bites.
- pork sausage - chicken, turkey, or plant based works great as well.
- bacon - turkey bacon is a great alternative- just make sure it is crispy!
Maple Glaze:
- powdered sugar
- milk - I like to use whole milk for the glaze.
- maple syrup - again, get the real stuff!

Instructions
- Preheat oven to 350F.
- In a bowl, whisk together pancake mix, milk, egg, and syrup till smooth. Grease a 24 cup mini muffin pan with cooking spray.
- Fill each muffin cup ⅔ full with batter. Top each muffin with a small amount of chopped bacon or crumbled sausage (or a mixture of both). Make sure that you have about ½ - ⅓ of the meat left to top after baking.
- Bake for 10 minutes and remove from oven. Allow the Pancake Bites to cool slightly. While bites are cooling, make the maple glaze. Whisk powdered sugar, maple syrup, and milk together till smooth.
- Remove Pancake Bites from baking pan. Dip top of bites into the glaze and top with additional sausage and/or bacon. Allow glaze to set and enjoy!

Yes! I like to freeze on a cookie sheet and then store in a ziplock bag.
