Baked oatmeal is a wonderful addition to your breakfast rotation. Banana Bread Baked Oatmeal is custard like, and is a breakfast to get excited about eating.
My kids and I love bananas and many times we eat them before they get nice and brown to make bread or other baked treats- like oatmeal. However, this recipe is worth buying a few extra banana to set aside for baking.
The oatmeal is similar to a bread pudding, but uses oats. It is not crunchy or too chewy, but soft, moist, and delightfully rich. The oatmeal is filled with banana and cinnamon flavors, and makes the house smell heavenly while it bakes.
My Banana Bread Baked Oatmeal is gluten-free and naturally sweetened with maple syrup.
My kids and I love to eat this for breakfast. My youngest like a little butter or peanut butter on top of his slice, and my oldest and I love an extra drizzle of pure maple syrup.
Ingredients
- Banana
- Eggs
- Vanilla Extract
- Maple Syrup
- Butter
- Milk
- Old Fashioned Rolled-Oats
- Baking Powder
- Ground Cinnamon
- 9x13 Baking Pan
- Mixing Bowl
Additional Mix-Ins
- Semisweet Chocolate Chips
- Toasted Coconut
- Raisins or Dried Cranberries
- Nuts- Walnuts are a great option
Instructions
- Pre-heat oven to 350°F.
- In a large bowl, mash bananas till almost smooth. Add eggs and vanilla. Mix.
- Add syrup, melted butter, and milk. Mix
- Next, add oats, baking powder, and cinnamon. Mix well.
- The batter will be very liquidy. Carefully, pour the batter into a 9x13 baking pan. Use a spoon or spatula to smooth and make sure oatmeal is evenly spread in the pan.
- Place pan in the oven, uncovered, and bake for 35 minutes.
- Allow the oatmeal to cool for 10 minutes before serving.
Modifications
- It is easy to make this recipe vegan. To adapt the recipe, use flax egg in place of the egg. Use another non-dairy milk, like almond or soy, in place of the milk. For the butter, use a vegan butter or melted coconut oil.
- Notes on milk: I use whole milk in this recipe, but 2% or 1% milk works well. I do not typically use skim for this recipe.
- I do not recommend using steel cut oats for Banana Bread Baked Oatmeal. Steel cut oats typically need most liquid and longer cook times. If you use them the oatmeal will likely be too watery and will take longer to bake.
Serving, Storage, and Freezer Suggestions
I love to serve my oatmeal with a side of maple syrup. It is also delicious with sliced fresh fruit on top.
I enjoy this oatmeal hot or cold. To reheat, simple pop a slice into the microwave for 20-30 seconds when it has been stored in the fridge.
Speaking of storage, this oatmeal can sit covered on the counter for about 2 days, but for long shelf life I like to store is covered in the fridge and it lasts about 5-7 days.
My Banana Bread Baked Oatmeal freezes well too! To freeze, make sure the oatmeal is completely cool and cut it into single serve squares. Place squares on a baking sheet and pop it into the freezer for about 30 minutes. Remove from freeze and store in a sealable freezer bag. Freezer on the baking sheet allows you to grab the single servings as you need them.
