Swedish Apple Pie or Äppelpaj is an American-Swedish twist on Smulpaj. Smulpaj is a Swedish dessert using fruit and baked without a crust.
Baking a pie without a crust might seem a little strange, but this pie is so delicious you will be sold after the first bite.
The apples bake in cinnamon and sugar and the top is almost cookie like- sweetened and spiced with sugar.
My Mom's family is Swedish and we actually grew up eating a Dutch apple pie recipe from my Dad's side of the family. That recipe is still one of my all-time favorites, but this is a really delicious variation on a loved recipe.

Apple Filling:
- granny smith apples
- sugar
- ground cinnamon
Crust:
- butter
- all-purpose flour
- sugar
- ground cinnamon
- egg
What Makes The Crust Unique?
The crust of my Swedish Apple Pie is similar to a cookie. The crust starts crisp on top and on the edges, but the portion close to the cooked apples is soft like the center of a cookie.
Instructions
- Pre-heat oven to 325°F. Grease a 9-inch pie plate with butter or cooking spray and set aside.
- Peel apples and slice into thin pieces. Place in a bowl and toss with cinnamon and sugar. Layer apples evenly into the pie plate.
- For the crust, mix melted butter, sugar and flour. Add the egg and mix.
- Evenly spread the batter over the top of the apples.
- Bake in the oven for 1 hour.
- Remove and allow pie to cool 20 minutes before serving.
