Grilling is a year-round activity in our house. I live in Green Bay, Wisconsin, and we love our brats and our football.
I love to grill brats, but I also love cooking brats in the oven. My Oven Baked Brats are delicious, and my method even gives a nice char to the brats like grilling typically would.
My recipe requires no boiling, and the brats are done in under 25 minutes. The brats get so plump and juicy too!
Baking brats in the oven is a great method if you do not have a grill, prefer roasting meat, or grill night gets watered down with a downpour!
What Are Brats?
Brats are a German sausage dating back to around the 14th century, but there are likely earlier variations. Originally, they were made from pork and veal, but now more often made with pork and beef with a blend of spices.
The word bratwurst comes from, "brat" meaning chopped meat and "wurst" meaning sausage. There are over 30 different types of brats, and many ways to prepare them! In the United States, grilling is one of the more popular methods, but oven baked brats or pan frying is also common.
Ingredeints
Bratwurst- There are so many types of brats to make Oven Baked Brats. Pick your favorite. I typically choose original or cheese.
Brat Buns - I love to use an actual brat bun because it holds together better than a hot dog bun. My favorite is Sheboygan (a town in Wisconsin) style with a dusting of cornmeal on it.
Parchment Paper - I use this for less mess on my baking bans
Baking Sheet - Any size baking sheet will do
Meat Thermometer - The ideal internal temperature for brats is 160°F. A meat thermometer is one of the best things to buy for perfectly cooked meat. I love Thermoworks TermoPop. It is so simple to use and the colors are beautiful. I love to give these as gifts during the holidays!
Brat Toppings- mustard, ketchup, sauerkraut, onions, pickles
Topping Options
What is the best topping for an Oven Baked Brat?
There are some that insist on mustard only, and then there are some that insist on mustard and sauerkraut only…..and maybe onions too.
Ketchup and pickles get the side-eye from some people, but it is actually pretty common to see ketchup on a brat.
I also love to throw a nice salty dill pickle on my brat as well.
Instructions
- Pre-heat the oven to 375°F. Line a rimmed baking sheet with parchment paper.
- Place Brats on the baking sheet. Make sure to space brats about an inch apart.
- Place baking sheet with brats in the oven. Bake for 10 minutes and flip the brats. Cook an additional 8-10 minutes.
- The brats should reach an internal temperature of 160°F.
- Remove from oven and serve on buns with desired toppings
Leftover Brat Ideas!
I like to use leftover Oven Baked Brats to make a delicious brat chowder or Beer and Brat Mac and Cheese.
Another great way to use leftover brats, if you have leftovers, is the chop them up and scramble them in eggs. Brats 'n' eggs is our go to breakfast when we are at our cottage in Door County the morning after a cookout.

- Brats Buns

The taste was excellent, but they didn’t brown up like they should I left them in the oven an extra 10 minutes then put butter on them to get them to brown but they didn’t very much.
