Creamy Chicken Noodle Casserole is a quick and easy casserole that is made with shredded chicken and pantry staples! Creamy, hearty, and comforting make this chicken and veggie packed casserole a family favorite.

Casseroles are one of my family's favorite dinners. Rich, creamy, meaty, filling casseroles...perfect for a cold night and awesome for lunch leftover the following day.

 One of my family's favorite casseroles fitting this description is my Creamy Chicken Noodle Casserole.

I use the traditional ingredients of a creamy chicken noodle soup, and a creamy base with a buttery cracker crumb top make a delicious and comforting meal.  

Another reason to love this casserole is that it can be assembled easily, and only requires a quick trip to the oven and you are ready to eat!  

I also sauté the veggies prior to putting them in the casserole because if cuts down on cook time and ensures that you have tender veggies in your casserole. My kiddos love all the veggies with the creamy noodles in this casserole- especially the carrots and peas.

Ingredients

  • white onions
  • carrots
  • celery stalks
  • olive oil
  • frozen peas
  • canned Cream of Chicken Soup
  • milk
  • sour cream
  • Salt and Pepper 
  • cooked shredded chicken
  • egg noodles
  • round butter crackers
  • butter
  • dried parsley

Instructions

  1. Pre-heat oven to 350°F.
  2. Heat a large skillet over medium heat and add olive oil. 
  3. Sautéed carrots onion and celery until tender and add peas.
  4. While veggies cook, in a large bowl, mix chicken, cream of chicken soup, sour cream and milk. Season with salt and pepper. Gently, fold in the noodles.
  5. Once veggies are tender, add them to the noodle mixture and gently stir. Spread chicken casserole in a greased 9x13 baking dish. Cover with foil and bake for 30 minutes.
  6. While the casserole bakes, prepare the cracker topping. Place crackers, into a sealable bag. Seal and crush the crackers. Add melted butter and parsley, seal, and mix with hands. Set aside.
  7. After 30 minutes, remove foil and add crushed buttered crackers. Bake uncovered for an additional 15 minutes. Remove from oven and allow and allow casserole to rest for about 5 minutes before serving.

Ingredients
 
 

  • ⅓ cup diced white onions
  • ⅔ cup chopped carrots
  • 3 celery stalks, diced

  • 2 (10.5) oz cans Cream of Chicken Soup
  • ½ cup milk
  • ⅓ cup sour cream
  • Salt and Pepper to taste

  • 2 sleeves round butter crackers
  • 4 tablespoon butter, melted
  • 1 ½ tsp dried parsley
