Ingredients

  • 1 tablespoon olive oil
  • 1 medium white onion, diced
  • 1 ½ cups chopped carrots
  • 2 cloves minced garlic
  • 14 oz smoked sausage, sliced
  • 4 cooked bratwurst, sliced
  • 1 ½ tablespoon flour
  • 2 ½ cups chopped russet potatoes
  • 12 oz German lager
  • 4 cups chicken broth
  • 1 cup water
  • ½ cup sauerkraut
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon caraway seeds

Instructions

  • In a large dutch oven, heat olive oil over medium heat.
  • Add the onions and carrots and cook till onions are tender and carrots begin to soften.
  • Add the garlic and cook for an additional minute.
  • Sprinkle in the flour to the vegetables and stir.
  • Add the potatoes and beer. Stir and bring to a low simmer.
  • Add the sliced sausage and bratwurst.
  • Follow with the broth, water, sauerkraut, salt, pepper, caraways seeds.
  • Allow soup to lightly simmer, stirring frequently, until the potatoes and carrots are tender.
  • Serve and enjoy.
