Tender ground beef mixed with onion and seasoning....and a secret ingredient: Nacho Cheese Doritos. A unique and delicious twist on meatloaf that everyone will love!
Nacho Cheese Doritos? I understand that you may be skeptical by the addition of snack chips to a meatloaf but res assured that this unique combination is delicious.
The BBQ and light cheese flavor is really good and the meat is so nice and tender. It is a totally unconventional meatloaf recipe, but a little creativity with our meatloaf resulted in an absolutely delicious dinner.
We love to have fun with different flavors and combinations in the kitchen, and this meatloaf does just that! My kids also thought it was a lot of fun that they got to have Doritos for dinner.
I love a simple BBQ on top of this meatloaf, and you could add a little hot sauce if you wanted a little heat in the topping. I always top the meatloaf towards the end of the cook time because it prevents it from becoming charred and maintains the sweet flavor.

I made this because I didn’t have any bread crumbs or crackers which is usually what I use, I will never use bread or crackers again. I have tried it with both the Nacho Cheese and with the Spicy Nacho Cheese, both turned out incredibly delicious. I used more onion then the directions because I really love onions. And my 2nd time cooking the regular Nacho Cheese one I put about a cup of Cheddar Cheese in the middle of the loaf OMG talk about to die for. One of the best things about meatloaf is you can make it so many ways. I have even used Ground Chicken a few times

Oh my goodness- cheese in the middle is GENIUS! I have not tried it with the spicy chips, but that is now on my list. I have a deep weakness for spicy chips.... So happy you loved it!

I made this nacho cheese doritos twice, the first time it tasted like the meatloaf you make from the oatmeal recipe it didn’t have much of a Doritos flavor at first but it made my kitchen smelled like Taco Bell, The second time I used the spicy Nacho Cheese Doritos and when you cut and ate a slice of meatloaf oh you knew it had Doritos in it It had a light spicy cheese flavor with the oatmeal meatloaf taste of ketchup sweet to it.
Ashley Lecker
Oh my goodness- using spicy Doritos is genius! I am going to try your method!

Your cooking instructions says to bake uncovered for a hour, maybe that’s why when I cook the meatloaf covered its like the flavor got a little washed away, its ONLY because when I cook the meatloaf uncovered the inside of the meatloaf is still raw to almost done, so it needs to be covered to guarantee it will be completely done,no rare meatloaf whatsoever.

I was wondering if you had a newer recipe for Doritos meatloaf using the newest flavor that Doritos has called Sweet and Tangy BBQ flavor it has a little heat to it.
Ashley Lecker
I do not, but I bet that would be yummy!

I used venison in the recipe and it was very good. A hunter friend of the family recommended the recipe so I gave it a try.
