Do you still have some zucchini that needs to get used? A bumper crop perhaps?
We made the most delicious zucchini side dish that was so simple, but so flavorful. We love roasting veggies, and zucchini is not excluded. I brushed it with a little olive oil, seasoned with a little garlic salt, topped with Parmesan cheese and Italian seasoning, baked them, and broiled them till they were golden brown. Yum. So much flavor packed into a tiny slice of zucchini. I was also pleased that 50% of my children ate it, and loved them. Rowan did not want to try them, and normally he is my veggie lover like his brother, but Kellen enjoyed them so whatever.
My favorite part of this dish is the amazing browned cheese on top of the zucchini. Is there anything better than melted cheese? I mean, I am from Wisconsin so I am likely biased, but that doesn't mean I am wrong. The addition of the garlic salt, and seasonings really put the flavors over the top for me. I am a little sad summer is coming to an end, and the abundance of zucchini will come to an end. I have not tried doing a pizza style roasted zucchini, but I have a few friends that swear by a little pizza sauce, cheese, Italian seasoning, and pepperoni..... I am going to have to put it on my list before my zucchini stash is gone.
I am in a final vacation prep mode before we are in the Dells for a few days. We like to make two trips to the Wisconsin Dells- one during the summer, and the other during the winter. I love going during the summer because we get to explore the outdoor area. There are a few different pools and a really fun lazy river. The river have a moving belt type of feature that bring you to a second level to circle before going down a small slide. Last year, Kellen insisted that I go first down the slide in our double tube and would not believe me that the bigger person should take the rear....needless to say I fell off the tube as he floated by. The kicker was that he said, "see we didn't fall"....there was no we about it my child.... This year he will be going first. I also love swimming in the wave pool with Kellen. We strap on our goggles and love to dive under the waves together- so much fun. I am so happy that both my boys are water lovers, and it something that we can both enjoy together when we vacation. Today I am making muffins and egg bites. I am also packing up beer, sausage sticks, easy mac, and hot dogs....because everything can't be homemade and, sorry not sorry, I like Easy Mac. Everything in moderation, right?
Parmesan Baked Zucchini Rounds
Ingredients
- 3 medium zucchini
- 2 tablespoon olive oil
- 1 tablespoon garlic salt
- ½ cup grated Parmesan cheese
- 1 tablespoon Italian seasoning
- ½ tablespoon dried parsley
Instructions
- Pre-heat oven to 400 degrees F.
- Slice zucchini into rounds about ½ -inch thick. Pat dry and place evenly spread on a baking sheet
- Brush zucchini with olive oil and season with garlic salt
- Top with cheese, then Italian seasoning, and finally parsley
- Bake for 8 minutes, or till tender. Finish by broiling 2 minutes to allow the cheese to slightly brown. Serve immediately.
