Lemon Blueberry Upside Down Cake is a simple dessert using a shortcut with a boxed cake mix. Filled with fresh blueberries and a simple powdered sugar topping makes a sweet and seasonal cake.

I love to bake, but I am all about a shortcut at times. The flavor combination of lemon and blueberry is a favorite in my house and I love to use a simple lemon cake mix as my base for my Lemon Blueberry Upside Down Cake.
I add a few extra ingredients to the box mix to create a rich and delicious lemon cake. The cake is baked over fresh blueberries with a hint of salt. The small bit of salt is what puts this cake over the top!
Upside down cakes are very simple to make, and they always come out so delicious with a few simple steps. Using a springform pan is key for a simple release of the cake, and a circular parchment paper ensures that there is not sticking from the cake or the berries.
I love to use blueberries in this recipe, but raspberries or blackberries are also delicious options.
Ingredients
- boxed lemon cake mix
- eggs
- vegetable oil
- water
- milk
- lemon zest
- dried lemon peel (optional)
- fresh blueberries
- sugar
- coarse salt (optional)
- powdered sugar (for topping)
Instructions
- Preheat oven to 350°.
- Line the bottom of a springform pan with parchment paper. Lightly grease the sides of the springform. Set aside.
- In a medium bowl, whisk together cake mix, eggs, oil, milk, water, lemon zest, and lemon peel (if using) for two minutes.
- In the bottom of the springform pan, add the blueberries. Sprinkle with sugar and coarse salt (if using).
- Top blueberries with the cake mix. Spread evenly so all berries are covered. Place springform on a baking sheet and place in the oven to bake for 40 minutes.
- After 40 minutes, using a toothpick, check the center of the cake. The toothpick should come out clean with only a few small crumbs.
- Remove cake from oven and allow it to cool. Release the springform pan and remove the outer ring. Place a plate on the cake and flip it so the blueberries are on the top. Remove the parchment liner.
- Cover if not serving right away. When ready to serve, dust with powdered sugar. Cut into slices and serve.
